Study Guide for Chapter 13 Nutrition Care and Assessment

Fig 13-1 What are the three ways in which illness and treatment can affect nutrition status? Give
some examples.
Roles of each member of health care team:
MD
RN
RD
RDT
Screening for malnutrition
What info helps identify pt with risk for malnutrition?
Be able to name the 6 Consensus Malnutrition Characteristics (slide) . Be able to identify
these in a larger list.
Nutrition care process—describe each step
Nutr. Assessment—
Nutr. Dx—
Nutr. Intervention—
Nutr. Monitoring/Evaluation—
What’s a PES statement? Where does it fit into the nutrition care process?
Nutr. Assessment—Table 13-4. What types of data are included in historical information?
Where does it come from?
Dietary Assessment— be able to differentiate methods in Table 13-6. Identify the benefits,
weakness of each.
24-hr recall
Food frequency questionnaire
Food record
Direct observation
(calorie count)
Anthropometric Data What do each of these measures tell you?
Ht & Wt--
Waist—
Head circ—
Which is more useful in interpreting weight changes in a patient, %UBW or %IBW?
(5th ed: Table 13-8) (6th ed: Table 13:7) What wt loss is associated with risk of severe
malnutrition at 1 month? At 6 month?
Biochemical Analysis
Besides malnutrition, what general factors influence serum proteins, albumin, transferrin, pre-
albumin, retinol binding protein?
How useful are albumin and transferrin for measuring malnutrition?
Are any of the six Consensus Malnutrition Characteristics lab values?

Table 13-9
This is a useful table for becoming familiar with the basic purpose of these common tests. Know
which labs tell you about anemias: Hct, Hb, MCV (size of red blood cells, for macrocytic and
microcytic) and MCHC (color of RBCs for hypochromic). If you want to learn lab values to
help with the ATI exam, please use the Mosby values in Shared Docs. There is also a quizlet
available for lab values.
Physical Exam
