FORMATION OF TRIGLYCERIDES
EXPLANATION
Triglyceride is formed via condensation process. Each of the group from the glycerol molecule
will react with the group of a fatty acid and form ester bond. As a result, 3 molecules of water
are being removed
BREAKDOWN OF TRIGLYCERIDES
EXPLANATION
Triglyceride is broken down via hydrolysis process. 3 water molecules are added to the 3 ester bonds present
in the triglyceride. The OH- (hydroxide ion) attacks the carbonyl carbon of the ester bond. One fragment of
the original molecule receives H+ from the water molecule to form the alcohol (hydroxyl group of glycerol).
The other fragment of the original molecule receives OH- (hydroxide ion) to form the carboxyl group in the
fatty acid.
