ASSESSMENT A – PRACTICAL OBSERVATION - PACKAGING LOG

INSTRUCTIONS – ASSESSOR

To complete this assessment, you are required to do the following.


 Observe the learner in a commercial kitchen, packaging prepared foodstuffs using a range of skills/tasks.
 Provide a range of prepared foodstuffs from the learner’s practical sessions and suitable packaging materials.
 Use the checklist when observing the learner using a range of packaging techniques and materials. Photocopy this checklist as many times as required.
 Observe the learner over a period of time while they learn and use various skills/tasks.
 Ensure that the learner can consistently perform all tasks multiple times satisfactorily.
 Decide when the learner is competent at all tasks.
 Each type of food listed must be packaged and labelled at least once.
 Each type of packaging material listed must selected used when packaging listed food items.

Assessor feedback
Date labels were checked prior to re-using the seafood chowder for service. After service the seafood chowder was labelled clearly and correctly packaged in
airtight plastic containers with lids.

Learner feedback
Was a little unsure about using the seafood chowder as it has a very strong smell. It was within the use-by date but I confirmed with the trainer to be sure before
using.
