INTRODUCTION

At Cervecería Centroamericana, they apply the


Lean principles (Define, measure, analyze,
improve and control). This is necessary since
they like to be updated with the best
technology because it will help to deliver the
products in the best way and to be friendly with
the environment.

THE LEAN SIX SIGMA MODEL USES A SERIES OF STEPS KNOWN AS
DIMIAC FOR ITS ACRONYM IN SPANISH: "DEFINE, MEASURE,ANALYZE,
IMPROVE AND CONTROL", THE WAY IN WHICH THE CENTRAL AMERICAN
BREWERY USES THESE STEPS IS AS FOLLOWS:
IN THIS CASE, IT CONSTANTLY SEEKS TO IMPROVE ITS PRODUCTION
CAPACITY.

Between the arrival of the ingredients and the departure of the product, each
litre of beer produces the equivalent of 0.076 kilograms of carbon dioxide. By
the end of the decade, Cervecería Centroamericana wants to slash that figure in
half. One troubling source of greenhouse emissions was fluorinated gases.
Next year, some of the plants will switch to boilers that run on wood products (or
bioenergy), in order to reduce the carbon emissions from that steam by almost 98
per cent. Between 2008 and 2018, Cervecería Ceontroamericana cut its carbon
footprint by 47 per cent. The company has now re-set its baseline to the 2018
numbers, and aims to cut emissions in half again by 2030
