Marshmallows:

- Prepare a baking pan with aluminium foil and a layer of oil.


-1/2 cup cold water + 37g gelatin, sit for 15 min.
- 1/2 cup of water, 1/3 cup of corn syrup and 2 cups of granulated sugar and 1/4 teaspoon of
salt. (Sugar in the center, not on the sides)
Boil over medium high heat without stir, let it 6 to 8 min, until 240F (115C)
-Mix the gelatin a little, then pour the hot mixture, trying not to hit the side of the bowl nor the
whisk.
- Mix for 10 to 12 min.
- touch the bowl to know how hot it is, it need to be warm.
- add 2 teaspoons of vanilla extract.
- FAST Oiled spatula clean the whisk and pour into the baking pan.
- Once you got what you can out of the bowl, smooth the top and set aside.
- 1/2 cup of corn starch and 1/2 cup of confection sugar, mix.
- Pour 2 tablespoons over the marshmallow and save the rest.
- Let it sit overnight.
- Next day, dust a cutting board with the corn starch sugar and oil a knife.
- 2 more tablespoons on the other side.
- Cut strips and cut cubes.
- Re oil knife if necessary.
- Few at a time, cover with corn starch sugar and toss them to remove the excess.
- Enjoy.
