How to make *Doughnut*

Ingredients

Flour 2 cups

I cup of milk

1 teaspoon of yeast

3 tablespoons of sugar

2 tablespoons of melted butter

1 egg

1 teaspoon of salt

Preparation for Doughnut

Prove your yeast

Sift your flour

Combine all the weighed ingredients with your proved yeast

Break egg into your dry ingredients

Add a little warm water if you dough have not formed

Cover to rise for 1 hour

Transfer on a flat floured surface and start kneading until it stops sticking to your hands excessively.
Use little flour at a time

Spread and use a circular object to cut the dough.

Cover your cut dough to rise again as this gives your doughnut volume

Use a smaller circular object to cut the middle➡ add enough vegetable oil in a pot and dip fry your
doughnut

Method 2

1) In a large bowl pour in the milk, yeast, sugar, salt egg and melted butter.

Stir together until well mixed.

2) Add plain flour and stir together till it forms a dough.

Knead until smooth.

3) Brush oil in a bowl and place your dough inside and cover with a proof until it doubles in size. It
should stay for 45 minutes to 1 hour in a warm place.

4) Take it out and roll it with a rolling pin. Cut out the shapes with a doughnut cutter and set it aside
to double in size for 20 minutes.
5) Fry in a medium heated oil.

*Egg Roll*

The same recipe used for the doughnut also works for egg roll but the only difference is that when
you spread and cut your dough, you will put your egg in the middle of the dough and wrap it up.

Also after wrapping the eggs, you don't keep it to rise again just fry immediately on low heat

If you want to use baking powder, just substitute the baking powder where you have your yeast.

Ingredients

2 cups (250g) of all purpose flour

1/4 cup of sugar or less or more depending on you preference.

1 tsp nutmeg

1-2 eggs for mixing dough

5 boiled eggs

Milk. Either liquid of powdered. It is advisable to use powdered milk as a beginner

1 tsp baking powder.

2 tbsp margarine

1tsp flavour (optional)

Procedure

*HOW TO MAKE EGG ROLL*

RECIPE

2 Cups Flour

1 Egg

1 Tsp Baking powder

1/4 Tsp Salt

1/2 Tsp Nutmeg

2 Tbsp Margarine

8-9 Tbsp Water

5 Eggs Boiled

2 Tbsp Sugar

PROCEDURE

👉In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg

👉Use your fingers to blend the Margarine into the flour until it’s crumbly.

👉Add the beaten egg and mix together. The dough should look dry at this point.

👉Begin to introduce the water a little at a time and work the dough till dough is soft and sticky but
still workable.

👉Work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes.

Work the dough again for a couple of seconds to a minute and divide it into

👉Tightly wrap each of the dough around each Egg.


👉Fry on a medium heat turning over and over again until it’s golden brown.

👉Serve your Egg Roll hot or warm. Enjoy

*OKPA RECIPE*

Okpa powder

Palm oil

Salt

Pepper

Warm water( hot enough for your hand to handle)

A bowl for mixing

Procedures

Put the powdered okpa in a bowl, add all ingredients listed excluding warm water .... add a
reasonable amount of oil then mix with ur hand until well mixed.

Add a cup of warm water( remember it's warm water) to the mixture and mix together with ur hand
while making sure there are no lumps

Gradually add warm water and mix with ur hand until u arrive at a not too thick or watery mixture
( just like ur pap)while making sure there are no lumps

Ur hand should look like that one in the picture

You must have put half pot of water on heat while preparing the mixture. If using nylon remember
to leave little or no space and tie tighy...after that put them inside the boiling water in the pot...
allow it to boil for about 30-45 mins depending on the quantity of okpa.

The okpa is ready....

GROuNDNUTSOUP RECiPE

Ingredients for Groundnut Soup

✅500g raw peeled groundnuts (peanuts)

✅Assorted meat and fish.

✅Beef

✅Shaki (cow tripe)


✅Dry fish

✅Stock fish

✅Palm Oil

✅A small bunch of (ugu) Pumpkin leaves or ✅6 cubes Frozen Spinach or Bitterleaf

✅2 tablespoons ground crayfish

✅2 big stock cubes

Salt & ground dry ✅cayenne pepper: to taste

Notes on the ingredients

✔Palm oil mainly adds colour and sometimes taste to soups so add enough quantity to colour the
soup to your liking.

✔Bitter leaves help tone down the sweetness of this soup so if you do NOT have a sweet tooth, then
you should use bitterleaves in preparing this soup. Let's put it this way: if you prefer bitter leaves for
your Egusi Soup, then you should use them for Groundnut Soup too.

✔You can also use fresh habanero peppers in place of dry cayenne peppers.

Grinder for grinding groundnuts:

✔Before you cook Groundnut Soup

✅Soak the stockfish and dry fish for a few hours. The length of time depends on how hard the stock
fish is. Some even need to be boiled a bit. . When soft, clean the fish, remove the bones and
separate them into small pieces.

✅Roast the raw groundnuts in a pan, stirring constantly till they look like this. Set aside to cool
down completely then grind into powder with a dry mill.

✅Wash and cut the pumpkin leaves into tiny pieces. If using frozen spinach, cut into small pieces
and wring out the excess water when fully defrosted.

✅Prepare other ingredients: grind the pepper and grind the crayfish.

Cooking Directions
Start cooking the shaki first as it is the toughest meat in the bunch. Always keep water to the same
level as the contents of the pot and top it up as you cook.

When the shaki starts to curl, add the dry fish and stockfish.

When the shaki is almost done, add beef and stock cubes and cook till all the meat and fish are well
done.

Add the crayfish, salt and pepper, cover and cook till it boils.

Transfer the meat and fish to another pot/container leaving the stock in the pot.

Add the ground groundnuts and stir very well till there are no lumps. Reduce the heat to very low
and start cooking.

Stir every 5 minutes and top up the water if necessary. This mixture burns easily so watch it closely
and stir as often as necessay.

Cook till a thin film of clear oil appears on the surface. This should take about 15 minutes. Add palm
oil and stir very well.

Add the beef and fish, stir and cook on low heat till it boils. For those who prefer their groundnut
soup without vegetables, the soup is ready at this time. If you prefer it with vegetables then go to
step 10.

Add the vegetables, stir and leave to simmer. Stir again and it is done.

Serve Groundnut Soup with any Fufu meal.

PEANUT BURGER WITH EGG

RECIPE 1

Hope this will be of help for those wanting to learn how to make peanut burger

Ingredients for coated peanut

6 cups of groundnuts

6 eggs

1kg of flour

2 cups of sugar

Half teaspoon nutmeg


2 tbspoon milk flavour

Half teaspoon salt

1 tbspoon baking powder.

Preparation.

1. Soak the groundnut inside hot water and add a teaspoon of salt and leave for 30 minutes, sieve
and dry the groundnuts. U can sundry or ovendry the groundnut if u wish

2. put the 6 cups of groundnuts inside a bowl with a round and smooth bottom for easy rolling.

3. sieve the flour inside a bowl, mix in the baking powder, nutmeg, and

milk flavour.

4. break the 6 eggs into a bowl and mix, put the 2 cups of sugar and the

salt and mix very well, allow to sit for 20 mins so that the sugar and salt will dissolve and if u can mix
till it dissolves,u can

5. Take the bowl of groundnut, put 1 tbspoon of the egg mixture inside the bowl and roll in a circular
motion, the egg will coat all the groundnuts

then you now sprinkle a handful of flour inside and roll in a circular

motion and the flour again will coat the groundnut. Repeat the procedure

until you exhaust the flour and the egg mixture. Pour the peanut inside a

tray, allow to set for 20 mins and fry.

Please,u av to be patient in step 5 cos if u are not,u won't get a good result

It won't be smooth,so u av to follow the instructions carefully....

Note: if you mix well, the egg and the flour should finish at the same time.

ASUN RECIPE

Ingredients:

1kg grilled goat meat

Scotch bonnet (Atarodo) to taste. But note that asun is usually spicy

2 large onions

seasoning cube

½ cooking spoon vegetable oil

Salt to taste

Procedure

Blend pepper and one onion coarsely, set aside.

Slice the other onion and set aside.

Cut the grilled goat meat into bite-sizes.

Place a wok or frying pan on a stove top and set to medium heat, add vegetable oil.

When it’s hot, add the peppers and onions and saute. Add the seasoning and salt to taste. Let that
cook for about 15 minutes.

Then add the goat meat, stir to combine. Allow this to fry for another 10 minutes.
Now add the slices onion to the add to the meat and combine.

Add some chopped green peppers if using.

Fry till the onions caramelise a bit and your asun is ready

Put the quantity you know you will be able to consume in each ziplock and store them in your
freezer.

It can last for months in your freezer and the taste will still remain the same.

The moment you bring it out from the freezer just put it straight on the fire.
