This is a recipe for upo guisado or sauteed bottle gourd with pork.
Ingredients
1 small bottle gourd upo, sliced
6 ounces pork belly sliced into small pieces
1 medium plum tomato cubed
1 medium yellow onion chopped
4 cloves garlic crushed
¼ teaspoon ground black pepper
3 tablespoons cooking oil
1 ½ cup water
Instructions
1. Heat oil in a pan
2. Sauté garlic, onion, and tomato
3. Add the pork. Cook for 3 minutes
4. Pour 1 cup water. Let boil. Adjust the heat to medium and then continue to cook until the
liquid completely evaporates
5. Add the sliced upo. Stir and then cook for 5 minutes.
. Season with ground black pepper and fish sauce.
7. Add water. Cook for 2 minutes.
. Transfer to a serving bowl. Serve.
