Egg fried Rice


You would be hard-pressed to find a Chinese household that doesn’t enjoy a good bowl of fried
rice. Growing up, whenever I saw a large bowl of cooked rice in the kitchen, I would cross my
fingers and wait with eager anticipation to see if it was fried rice night. The flavor of rice mixed
with eggs, vegetables, and a thin layer of soy sauce was something that brought comfort to my
belly.

Recipe
 Try to use day-old rice: Fried rice is usually a dish that you make to repurpose the
leftover cooked rice from the day before. You want to avoid freshly cooked rice because
it is still moist and steamy, which may yield fried rice with a mushy texture. (Notice in
the photo below how you can see the individual grains of rice instead of a mushy mass of
rice.) However, if you forget about cooking rice the day before, here is a little trick that I
use. Spread a layer of freshly cooked rice onto large baking sheets and let the rice air out
for 1 to 2 hours—the longer the better. The grains of rice will dry out during this process.
 Using packaged rice: For this recipe, I experimented with using packaged pre-cooked
rice, which is what you see in the photos. These packages usually contain 2 cups of
cooked rice, so you’ll need 2 packages for the recipe. The packaged rice is fine,
especially if you are too busy during the week to cook rice. However, it is definitely more
expensive than buying rice and cooking it yourself (I sound like a mother here). I also
found a slight smell when I opened the packages (probably from whatever preservatives
the manufacturer used), though not enough to make me throw the rice straight to the
trash. Ultimately, I recommend cooking the rice yourself, but hey, I understand if you
don’t have time for that.

Tapsilog Recipe
The word Tapsilog is an acronym that stands for Tapa Sinangag at Itlog. These are the three
components of the meal. Tapa refers to beef tapa. This are fried marinated beef slices.
Sinangag, on the other hand, is a word used to refer to garlic fried rice. The last three letters of
the word tapsilog is derived from the filipino translation for egg, which is itlog. A piece of egg is
fried and forms part of the meal.

instructions
1. Prepare the tapa by placing the beef in a large bowl. Combine with all the tapa
marinade ingredients. Mix well and cover the bowl. Place inside the fridge and
marinate overnight.
2. Cook the garlic fried rice (sinangag na kanin) by heating 3 tablespoons cooking oil in
a pan. Add crushed garlic. Cook until garlic turns light brown. Add the leftover rice.
Stir-fry for 3 minutes.
3. Season with salt. Continue to stir-fry for 3 to 5 minutes. Set aside.
4. Start to cook the tapa. Heat a pan and pour the marinated beef into it, including the
marinade. Add ¾ cups water. Let the mixture boil. Cover the pan and continue to
cook until the liquid reduces to half. Add 3 tablespoons cooking oil into the mixture.
Continue to cook until the liquid completely evaporates. Fry the beef tapa in
remaining oil until medium brown. Set aside.
5. Fry the egg by pouring 1 tablespoon oil on a pan. Crack a piece of egg and sprinkle
enough salt on top. Cook for 30 seconds. Pour 2 tablespoons water on the side of
the pan. Cover and let the water boil. Continue to cook until the egg yolks gets
completely cooked by the steam.
6. Arrange the beef tapa, sinangag, and fried egg on a large plate to form Tapsilog.
Serve with vinegar as dipping sauce for tapa.
Lugaw with Egg Recipe
Nothing comforts like a bowl of lugaw (rice porridge or congee): it's hearty and easy-to-make
and makes for a great meal when you're sick. Made primarily of rice, water, and salt, this version
has chicken in it, making it a heftier meal. Novice cooks will have an easy time putting this one
together. Don't forget to save this recipe for a rainy day, too! Top with hardboiled eggs, crisp
garlic bits, and spring onions.

How to cook Lugaw with Egg


Heat oil in a pot over medium heat and sauté onions, garlic, and ginger. Add patis and bring to a
boil. Add the rice grains and stir. Add the stock, mix then bring to a boil then reduce to a simmer.
Simmer for 30-40 minutes while stirring constantly or cook until mixture thickens to you desired
consistency.
Add chicken bouillon cube, mix well and adjust seasoning as necessary. Top with sliced hard-
boiled eggs, fried garlic, and spring onions.
Banana pancake

 1 cup all-1 cup all-purpose flour

 1 tablespoon white sugar

 2 teaspoons baking powder

 ¼ teaspoon salt

 1 egg, beaten

 1 cup milk

 2 tablespoons vegetable oil


 2 ripe bananas, mashed

 purpose flour

 1 tablespoon white sugar

 Step 1

Combine flour, white sugar, baking powder and salt. In a separate bowl, mix
together egg, milk, vegetable oil and bananas.

 Step 2

Stir flour mixture into banana mixture; batter will be slightly lumpy.

 Step 3
Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop
the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook
until pancakes are golden brown on both sides; serve hot.


Vegetable Fried Rice

 3 cups water

 1 ½ cups quick-cooking brown rice

 2 tablespoons peanut oil


 1 small yellow onion, chopped

 1 small green bell pepper, chopped

 1 teaspoon minced garlic

 ¼ teaspoon red pepper flakes

 3 green onions, thinly sliced

 3 tablespoons soy sauce

 1 cup frozen petite peas

 2 teaspoons sesame oil

 ¼ cup roasted peanuts (Optional)

 Step 1
In a saucepan bring water to a boil. Stir in rice. Reduce heat, cover and simmer
for 20 minutes.

 Step 2

Meanwhile, heat peanut oil in a large skillet or wok over medium heat. Add
onions, bell pepper, garlic and pepper flakes, to taste. Cook 3 minutes, stirring
occasionally.

 Step 3
Increase heat to medium-high and stir in cooked rice, green onions and soy
sauce. Stir-fry for 1 minute. Add peas and cook 1 minute more. Remove from
heat. Add sesame oil and mix well. Garnish with peanuts, if desired.
