Food borne diseases

Food Borne Diseases ➢Any illness that results from consuming food
contaminated with microorganisms with toxic compounds

Diarrhea ➢Loose, watery stools ➢Feels the urgency to have bowel


movement multiple times a day ➢Experience nausea, vomiting,
abdominal bloating, cramps
Cause: • Intestinal virus or bacteria • Allergic reaction to food • Eating
food that upsets the stomach • Drinking too much alcohol
Management: • Medicine: Loperamide • Drink lots of fluids • Non-
caffeinated soda

2. Dysentery ➢ Episode of diarrhea with blood ➢ gastrointestinal


disorders with inflammation of the large intestine or colon
Cause: • Contaminated food/water • Bacteria (Shigella, Escherichia coli
or E coli, Salmonella, Campylobacter • Parasites (Entamoeba
histolytica)
Symptoms: • Abdominal pain, bloating, flatulence • Bloody diarrhea,
nausea with or without vomiting DEVEL

Management: ➢ Medicines: antibiotics/ anti-parasitic medications ➢


Drink plenty of water ➢ Electrolyte solutions
3. Typhoid fever ➢ Caused by Salmonellae typhi bacteria from
contaminated food or water

Symptoms: ➢ Fever, headache, diarrhea, poor appetite, body pains,


lethargy or lack of energy ➢ Chest congestion, abdominal pain

Management: ➢ Medicine: antibiotics for 7 – 10 days

4. Cholera ➢ Infectious disease caused by Vibrio cholera ➢ Can cause


severe diarrhea leading to dehydration

➢ Spreads from the stool or feces of an infected individual that


contaminates food and water supply ➢ Municipal water, street food,
growing food, raw or uncooked seafood caught in polluted waters

➢ Symptoms of dehydration: ➢ Rapid heart rate, dry mouth, throat


and eyes ➢ Thirst, muscle cramps

Prevention: • Use safe and clean water (boiled, chemically disinfected,


bottled) • Avoid unpeeled fruits and vegetables • Avoid raw meat and
shellfish • Avoid unpasteurized milk/milk products
Management: • Hydration – drinking enough water • Antibiotics
