Mix together 1/3 water to 2/3 potato flakes and a little cornstarch.
Disperse the mixure and roll it into one long potato sheet, using four
tons of pressure. Cut out oval shapes from the sheet and take out the
scrap dough, which will be recycled into the chip-making process.
Transfer the cut chips into the fryer with hot oil and rolling molds to
give them a concave shape, makes it easier for stacking for 11 seconds.
Run them through the blower to get rid of excess oil. Portion and pack
them in tubes, ready for shipping.
