Basic Fish Rub Recipe

Ingredients
1 cup firmly packed brown sugar
1/2 cup coarse salt
1 tablespoon black pepper
1 tablespoon dried dill
1 tablespoon mustard powder

Instructions
1. Combine all ingredients in a small bowl with your fingers.
2. If using as a seasoning, just sprinkle on the fish before grilling.
3. If using as a true rub (which will season and start to cure the fish), sprinkle on the fish and rub with your
fingers. Let sit for 2 hours up to a day in advance prior to grilling.

1/3 cup paprika
3 tablespoons dry mustard
3 tablespoons onion powder
3 tablespoons garlic powder
2 tablespoons ground basil
1 tablespoon red pepper

Optional to make the rub sweeter: 2 tablespoons brown sugar

Instructions
1. Combine all ingredients. Store in an airtight container. When applying to ribs, coat heavily and massage
into the meat.

1/4 cup paprika
1/4 cup mild or medium chili powder
1/4 cup brown sugar

1/2 cup paprika
1/4 cup chili powder
1/4 cup brown sugar

Instructions
1. Combine all of the spices and seasonings well. Store in an airtight container and keep it in a cool, dry
location. This recipe makes enough rub for two or three briskets.
2. To season your brisket, rub a generous amount of the dry rub seasoning onto all sides. Wrap the brisket in
plastic wrap and leave it in the fridge for at least 12 hours, and up to two days. The flavors will absorb into
the meat during this time.

Since everything is supposed to be bigger in Texas, choose a


big beef brisket for this dry rub recipe. To prepare the
brisket, trim any fat deposits down to about one-quarter inch
thick. Next, score the fatty side with a sharp knife. This
allows the dry rub to reach the meat.
