ABSTRACT
Food hygiene and sanitation are the main point to control food borne disease such
ash e p a t i t i s A v i r u s ( H V A ) , d i a r e , c o l e r a , e t c . T h e a i m o f t h i s r e s e a r c h i s
t o l e a r n t h e  procedures food hygiene and sanitation of street vendors in Jember
University Area.Deskriptive study design was conducted on Jl. Jawa and Jl. Kalimantan. The
sample were20 street vendors, which was selected by simple random sampling technique.T h e
result. The condition of water supply which used for cooked food was
g o o d i n  phisick (90%). The water wasn’t cooking well (70%). Some cooked food
was boughtfrom other places by bicycle (30%). Respondents were not have sewer (37%). They
usedto throwing the solid waste into the bamboo basket (30%), handwashing before touchedthe
food was done by 2% responden, they used to smoking when cooking (35%), Apronusually
used to by (15%) responden. Protecting their hair with veil (25%), hand
towels(80%), the regularly dish washing without detergent; plates (15%), glass
(40%), spoonsand forks (40%). They use to dish towels once per mounth (45%),
dried the equipmentsthe utensils by towel (60%), protecting the equipments the
utensils (15%) ,protecting cooked food (65%). There was flies in cooked food
(30%).C o n c l u s i o n . W a t e r s u p p l y , f o o d p r o c e s s i n g , d e s i g n s e w e r , f o o d
h a n d l e r , s a n i t a r y equipments and utensils of street vendors still potential to make
foodborne disease. Itsneed educating food services personnel in food hygiene and sanitation
from governmentand students of public health Jember University.
