 Final Examination – Written Test (20%)

Final examination is a closed-book examination of 2 hours. The examination consists of two sections:
Section A: Structural and/or Essay Questions (10 marks)
(Learning Outcome assessed: 1 – 4 from topics 1 to 6
Students have to answer 2 out of 4 short answer questions.

Section B: Case-Based Question (10 marks)


(Learning Outcome assessed 3 & 4; any topics from 7 – 10)
Students are given a short case and have to answer all the questions in relation to the issues
presented.

 Final Examination – Practical Test (20%)


Final examination is a closed-book examination of 5 hours. The examination consists of two sections:
Section A: Time Organization& fiche technique (5 marks)
(Learning Outcome assessed: 1 – 4 from topics 1 to 6
Students are given 1 hours to prepare fiche techniques and time organization based on a
basket of ingredients

Section B: Cooking preparation (15 marks)


(Learning Outcome assessed 3 & 4; any topics from 7 – 12)
Students are given 4 hours to prepare a menu based on a basket of ingredients
