Manufacturing Tea

Tea is a drink containing caffeine, which is made by brewing leaves, leaf shoots, or leaf
stalks dried from the Camellia sinensis plant with hot water. There are several steps in the
process of making tea. Firstly, picking fresh tea leaves by choosing the top two tea leaves and
buds in order to produce the best quality tea. Secondly, withering leaves tea by way of leaves
scattered outdoors with cloth dialation and evaporation process accelerated by the sun's heat
to get out about 60% moisture. Then, tea is processed by traditional methods by rolling
(rolling leaves and applying pressure) until enzymes can be released by the leaves but in
modern methods by cutting (leaves cut, torn, and curled) until formed smaller granular pieces
created. Next, oxidation or fermentation is done at the time of rolled leaves spread on tiles or
cement until the color and aroma on the tea leaves change. Finally, Firing or drying is done in
the oven or hot water dryers to remove 97% moisture and stop fermentation by destroying
enzymes. Drying is said to work if the aroma and taste is stable is also ready to be brewed.
