Whether it’s Taco Tuesday or you’re simply craving this classic dish, fish tacos
are the perfect way to spice up your night! This crispy halibut fish taco can also

This recipe was developed with an air fryer but grilling also creates a healthy
alternative. To grill, after preparing the halibut, wrap it in aluminum foil and grill
for about 15 minutes. Serve with my favorite refreshing, low calorie, and non-
alcoholic drink that is great for everyone in the family: faux-jitos! Read Now

Summer is the ideal time to not only obtain the vitamin D that
many are lacking, but also utilize this warm weather to go outside
and exercise! Below are guidelines for summer success.

Habit Tip: Journaling


The summer is a great time to find hobbies or passions, and creating a journal
may just become your new Netflix. Journaling allows the mind to relax, recognize
and reflect on daily activities, thoughts or food patterns. While there are hundreds
of options at craft stores and online, it is also easy to make one at home. Start
recording what you do, eat and how you feel each day. This will allow you to
truly think about strengths and weaknesses while maintaining optimal health!

This Month’s Exercise Challenge


Sometimes we are so accustomed to our surroundings and routines that we forget
there is a world outside our bubble! Research a new park, trail or beach that you
have never been to and is not too far away. Have lunch, take a walk or run on the
sand, and explore!! The nice change in scenery may surprise you 

Recipe: Halibut Fish Tacos

Ingredients: ⠀
Fish: 
 Halibut cut into cubes or strips⠀
 Flour⠀
 2 eggs⠀
 Panko breadcrumbs⠀
 Salt and pepper⠀
Slaw: ⠀
 Bag of cabbage
 Red onion sliced⠀
 1-2 cloves of garlic minced⠀
 2 tablespoons of avocado⠀
 1 tablespoon of olive oil⠀
 2 tablespoons of lime juice⠀
 Jalapeño powder – to taste (I used about ¼ teaspoon) or fresh sliced in the slaw⠀
 Cilantro chopped⠀
 Salt and pepper⠀

Directions for fish: ⠀


1. Squeeze lime, then add salt and pepper onto fish
2. Set up the flour, egg and panko (salt and pepper) in 3 different plates⠀
3. Dredge in flour, then egg and then panko breadcrumbs
4. Air fry fish in batches at 400 degrees for 6-8 minutes (take a peek after 5 minutes) ⠀

Directions for slaw: ⠀
1. Whisk lime juice, garlic, salt, avocado, olive oil, jalapeño powder and cilantro together
2. Dress the cabbage and red onion

Recipe: Faux-jitos
Ingredients:
 Seltzer
 3 limes (lemons and oranges work too)
 Mint

Directions:
1. Put mint into a glass, then muddle and crush mint to get the oil out
2. Squeeze all limes and fruit into another glass
3. Pour lime juice into the glass with mint and muddle again
4. Place ice and seltzer in
5. Enjoy!
