In order to achieve maximum efficiency the BIOFINE CLEAR solution should be dosed
into the beer stream during transfer from the Fermentation Vessel to the MV.

For best results, the solution should be dosed over the entire run. A variable speed,
positive displacement pump should be used, which will cater for different dosing
requirements.

If the brewery is using a "Unitank" process then ideally the pitching yeast should be
removed first. Adding the BIOFINE CLEAR to the fermenter, before removing pitching
yeast, will result in unnecessary high dose rate due to the high yeast count, and large
tank bottoms.

There are 2 methods that may work for dosing BIOFINE CLEAR in breweries using the
‘Unitank’ process

1. Prior to the addition of BIOFINE CLEAR and when a target gravity has been
achieved, the temperature should be decreased to <4°C. At this point 90% of the
yeast should have settled out and may be cropped for subsequent pitching’s.
2. The stock solution is added via a suitable centrifugal pump.
3. The solution should be injected rapidly to ensure good mixing.
4. Additional mixing by vigorous CO2 sparging for 5 - 10 minutes is also
recommended.
5. After fining addition reduce the temperature to 0° or -1°C.
6. Take samples every 2 - 3 hours and check clarity or yeast cell count.

An alternative method of BIOFINE CLEAR addition is outlined as follows:

1. At the end of fermentation, prior to cooling, crop as much yeast as possible.
2. Apply cooling to the bottom portion of the vessel only, and at the same time add
BIOFINE CLEAR solution via the top of the vessel sample very slowly. As the
beer in the tank cools from the top, convectional currents are generated which
may aid the dispersion of the BIOFINE CLEAR solution in the beer.
