1 2.5 cm galangal piece, peeled
10 kaffir lime leaves
1/4 cup lime juice
6 cups of low sodium chicken broth
680 grams skinless chicken thighs
8 ounces of shiitake or maitake mushrooms
13.5 ounces of coconut milk
2 tbsp of fish sauce
1 tsp of sugar
2 stalks of lemongrass, outer layer removed
Chili oil, cilantro leaves and lime wedges for serving

How to cook Tom Kha Kai recipe:


Smash lemongrass and galangal, then cut lemongrass into 10 cm pieces.
Bring lemongrass, galangal, lime leaves, and broth to boil.
Reduce heat, let the broth simmer until 10 minutes.
Discard solids and strain broth into a clean saucepan.
Add chicken and bring back to boil. Reduce heat, then add mushroom.
Simmer for 25 minutes until chicken is cooked and mushrooms are soft.
Pour in coconut milk, fish sauce, and sugar.
Serve with chili oil, cilantro, and lime wedges while still warm!
