Gardenia’s Bread Processing

Gardenia bakeries follows three phases in the food production process.

1. Input

Gardenia has established a high-quality control team to guarantee that all components and raw
materials are fresh and of the highest quality. From product selection to purchase, they strictly inspect
and specify the product's quality and finest ingredients. Gardenia purchases raw materials utilizing a
Just-in-Time approach. As a result, they are extremely effective at inventory management.

2. Process

Gardenia's new facility is equipped with cutting-edge technology that meets the worldwide baking
industry's processing standards. It uses a unique technique to make baked bread. The whole bread-
making process is thoroughly controlled by quality controllers who are well-trained. They examine the
entire process to guarantee that only high-quality loaves reach the market. Aside from that, controllers
are in charge of making sure each loaf made is of the highest quality and satisfies client requirements.

3. Automatic blending

A computerized system control begins the manufacturing process. Begin mixing the appropriate
quantity of high-quality components. This ensures that each loaf is of comparable quality.

4. Production of sponge mix

The sponge is made with specially designed Gardenia enhanced flour, filtered water, yeast, vitamins,
and minerals, which are then discharged into a trough.

5. Fermentation room

After that, the sponge dough is maintained in a fermentation chamber with temperature and humidity
controls. The fermentation process contributes to the development of a distinct Gardenia bread texture,
fragrance, and flavor.

6. Production of dough mix

At this point, the sponge is blended with the remaining ingredients to produce the dough.

7. Divider

The dough is separated into specified weights for each loaf and sent to a rounder and checkweigher.

8. Intermediate proofer.

After resting for 10 minutes in the intermediate proofer, the dough is simply shaped and placed in the
baking pans.

9. Final proofer

At this final proofer stage, the yeast is allowed to rise at a regulated temperature and humidity for a
longer period of time. The dough is ready to bake after it has risen to the correct height.
10. Tunnel oven

In the state-of-the-art tunnel oven, gardenia breads are cooked for 20 minutes at a temperature of
roughly 200 degrees Celsius.

11. Automatic slicer & bagger

The bread should be stored in the refrigerator for about an hour. After that, it'll be ready to slice and
pack. Gardenia packaging is mechanically sealed before being automatically sealed with kwil-logs tags
that have the use-by dates written on them. The packaging for Gardenia Delight is one of a kind. The
colorful package is shown in an unusual fashion, with the upright orientation. Aside from that,
Gardenia's packaging included the G-lock. G-lock is a clip that snugly seals the Gardenia bread in its box,
preserving freshness and ensuring the bread's flavor, fragrance, and softness. The following is the
process of creation.

12. Output

After all of the processes have been completed, it's time to go on to step 3, which is output. All raw
ingredients have been transformed into a finished product that can be sold which is the bread. The
company's product is sold at supermarkets, grocery shops, convenience stores, and variety stores.

PRODUCTION COST

Gardenia Bakeries, the country's largest bread producer, has increased output by 30% to meet
increased demand for bread and bread products, while urging consumers to refrain from hoarding,
which causes a needless shortage of bread in grocery stores and supermarkets. Gardenia Bakeries
Philippines Inc. president and general manager Simplicio Umali Jr. claimed the company has been
running at 100% capacity, which is 30% more than the pre-coronavirus average of 70-80 percent.
They no longer shut down their factories to deal with the unusually high demand, as they did
previously.

Selling cost

When it comes to deciding the price of bread, Gardenia employs competition-based pricing, which
entails basing the price on rivals' cost, price, and other marketing items. Gardenia will compare the
product's value to its price. The price should be set between the price ceiling and the price floor.
Gardenia has also taken into account a variety of environmental factors while determining its rates.
They also think about what the market wants. Gardenia's bread is less expensive than other brands.
Gardenia makes advantage of psychological pricing to entice customers. The psychological pricing refers
to the prices that buyers keep in their heads and refer to while evaluating a product. Gardenia carefully
manages the price of bread since it will effect demand and put a strain on the family. Gardenia is
attempting to identify a single advantage that will benefit both the firm and the consumer.
