Reflection Paper

Together with the Astoria Culinary and Hospitality Institute, or ACHI, Central Luzon
State University hosted an educational webcast on food safety and sanitation. It was
held through Zoom on Monday, November 15, 2021, from 1 p.m. until 5 p.m., with
about 200 participants.

In this webinar, I learned that food safety and sanitation are the most important skills
to master since they will help us protect our lives from illness, pain, and suffering, as
well as death. I learned how to wash and disinfect all dishes, silverware, and
glassware correctly from the lecturer on kitchen sanitation and disinfection. Also,
knowing the International Food Safety Icons has given me new knowledge, which
has been extremely beneficial to me as a hospitality management student. The
speaker talked about the importance, benefits, and costs of food safety, as well as
how we develop food-borne illness from eating contaminated foods. He also went
through the differences between food-borne illness and diseases in detail. I learnt
that we must remember to eat safe, clean food and to avoid eating or purchasing
food from the street, which may contain germs that spread diseases.
The lecturer also addressed time and temperature control, discussing and detailing
how to keep food out of the danger zone. As a result, I learnt proper cooling
procedures and that we should only reheat food once. The speaker in this webinar
covered the various types of dangers that we may meet when accepting stocks,
preparing food, and serving it, as well as the microorganisms that are normally
present in food and the hazardous organisms that can cause human food related
illness. While he was talking, he offered us instances from inside the kitchen to help
us understand the topic.

After going over the crucial facts of food safety and sanitation, the speaker went over
and explained how COVID-19 affects the business. He then showed us a video of
kitchen tools and equipment, as well as how to correctly use them to keep the
kitchen floor clean and sanitary. This webinar provided me with a wealth of
information, and as a first-year student, this webinar was extremely beneficial in
providing me with valuable insights into the field of hospitality management.
Despite the new learning system, the speaker is skilled in sharing and discussing the
webinar's subjects, and I obtained fresh experience. The usage of technology by
ACHI's professors and staff expands their potential to feed kids with new knowledge
in these modern civilizations. The information I learned in this webinar will help me
not only with my academic studies, but also with food safety and sanitation, which I
will use when I prepare food for my family or when we have special events.
