About the book:

- In largescale food production and processing, safety and quality monitoring is vital for public health
and imperative for achieving global food security. Recent technological advancements in processing
and surge in consumer demand have led to a variety of processed foods. Fast changing lifestyles due
to recent outbreak of COVID-19 pandemic, eating habits, increased demand for Ready To Eat (RTE)
and packed food. Use of pesticides, adulteration (such as preservatives, colourants, flavouring agents,
stabilizers) microbial adaptation and altered human susceptibility to microbial hazards have
contributed to augment frequency of food-borne diseases. This causes issue in global public health,
leading all stakeholders including consumers to be more concerned about food safety and quality than
ever before.
- Nanotechnology based research for food safety and quality monitoring is at nascent stage but has
proven to detect highly specific pathogenic microbes and adulterants. With the advancement in
knowledge about behaviour of nano-engineered materials in food and its toxicity, the applications of
nanotechnology is expected to reach unprecedented levels. The proposed book intends to be
knowledge repository for academia and industry to lead the futuristic research.
