CHAPTER I

INTRODUCTION

Background of the study

Malunggay is a so commonly referred to as moringa leaves or

drumstick tree because of its long and slender tree. The health benefits of

malunggay are well known not just in Asia and Africa but also in other

countries across the globe.

The malunggay leaves can also be beneficial for people who are

aiming for weight loss. The amount of fiber it has can contributes in

detoxification. It also helps in controlling appetite. The best part is that

malunggay can boost one’s energy level which leads to becoming more

active every single day

Ice cream is a sweetened frozen food typically eaten as a snack or

dessert. It may be made from milk or cream and is flavor with a sweetener,

either sugar or an alternative, and a spice, such as cocoa or vanilla, or with

fruits such as strawberries or peaches

Every ice cream has in its composition vitamins A, B, C and D. ice

cream may prevent blood coagulation? Most of ice cream has vitamins K,

that help to prevent this problem. Its big nutritional value with protein and

carbohydrates, it is considered a daily huge source of energy, for that

reason, it would be possibly consumed daily

In this light of the study steered by the researcher develop the

Cucumber Ice Cream with Moringa Leaves to determine the effectiveness

and productivity of this product for the student and teachers, as well as in

community surround in President Ramon Magsaysay State University

located in Main Campus in Iba, Zambales

Statement of Project Objective

The main objective of this study is to bake Cucumber Ice Cream with

Moringa Leaves and determine its Acceptability.

Specifically, this study aimed to satisfy the following objectives:

1. What are the characteristics of the product of the product that made

it consumable by all consumers?

2. How will the product affect its consumers?

3. What benefits can a consumer acquire after eating the product

4. Determine the Acceptability of the Cucumber Ice Cream with Moringa

Leaves

4.1 Procedure

4.2 Deliciousness

4.3 Productivity

Significance of the Study

This study aimed to develop Cucumber Ice Cream with Moringa

Leaves. This product will provide nutrients and benefits to the stakeholders

Future researcher. The student will have an aid for studying in their

future research. It present accurate information and process and procedure

Children. The children will be going to get nutrients from the

product that they surely love. Through this, they will see vegetable as their

and favorite dessert and not as the worst kind of food they will ever tasted

Teacher. The outcomes of this study will facilitate them to create

efficient strategies and approaches to make learning more strategies

Community. The people lives in the community will be provide with

product that are beneficial to their health. The products are applicable for

all age and fit as a good source of income

Scope and Limitation

The study covered the quality and nutrient of moringa leaves with

ice cream. The common moringa leaves has exploded in popularity because

it's such a good, easy-to-use, and accessible superfood. Rich in nutrients

and vitamins, the humble moringa offers lots of culinary possibilities, too.

It's time to reap the healthy and delicious benefits of this leafy vegetable,

otherwise ice cream is one of the recipes of moringa leaves with ice cream it

is so famous especially for children because of our bodies, and taste buds,

have evolved to crave sugar on the regular.

In making delicious food, the concepts that was used in this

product are the mixing of two recipes the moringa leaves and ice cream to

can be source of income and afford of the community. this study was

conducted at the President Ramon Magsaysay State University.

CHAPTER II

THEORETICAL FRAMEWORK

This chapter presented related information basic to the project study

in the field of Food and Beverage. The discussion adopted the thematic

approach on the following topics: the procedure, process and definition of

Cucumber Ice Cream with Moringa Leaves and the concluding statement.

Review of Related Literature and Studies

Ice cream

Ice cream is a mixture of milk, cream, sugar, and sometimes

other ingredients, that has been frozen into a soft, creamy delight using

special techniques. Ice cream has been a popular treat for hundreds of

years, but only become common place since the wide spread use of

refrigerator. The exploding popularity of ice cream has led to a number of

ice cream variation including frozen custard.

While according to Cenzon (2016), ice cream isn’t typically for

its nutritional value. There are several health benefits associated with this

frozen treat. Since ice cream is a dairy like milk or yogurt, it contains some

of the same vitamins and nutritional content. It is important to read the

nutrition label when selecting a type of ice cream to indulge in to maximize

health risks typically associated with ice cream due to its high calorie,

sugar and saturated fat content.

Calcium

Dietary calcium is important for lifelong bone health. Milk is a

good source of bioavailable calcium, but consumption has disinclined

among young adults. The aims were to determine whether calcium-fortified

ice cream, a palatable source of calcium, produces significant, sustainable

changes in hormone (PTH) in premenopausal women with calcium.

Protein

Like many dairy products ice cream is a source for protein a

macronutrient that is important for parts of the body like bones, muscles,

blood, skin and cartilage. Protein is also important for repairing and

building tissue, while certain parts pf the body, like hair and nails, are

made entirely out of protein.

Vitamins

Ice cream typically contains vitamin A, Vitamin B2 and

Vitamin B12 micronutrients that are only needed in small quantities unlike

protein, vitamin A is important for healthy skin, bone metabolism and

immune function. Vitamin A is also very important for the retina, allowing

proper eye function for low-light and color vision

There are many flavors of ice cream in the world. The most

common flavoring or main ingredients use in making ice cream are fruit.

Cucumber

According to Dannie (2015) cucumber are the basis of a good

pickle, but they are also commonly eaten raw, a warm weather vegetable,

cucumber have a refreshing taste and can be easily added to sand witches

or salads to provide extra nutrition and a crunchy texture.

Cucumber is rich in a number of essential vitamins, including

vitamin K also known as the clothing vitamin. Vitamin K is essential for

helping your blood clot and the recommendation daily amount is 90

micrograms for adults over the age of 19. A half cup serving of sliced raw

cucumber contains 8.5 micrograms of vitamins K, almost 10 percent of the

RDa for adults

Research Literature

Cucumber Ice Cream with Moringa Leaves is a product originated in

company of Michael Sy which managed the activity of ABC holdings, it

started with a small-scale business of food manufacturing in Laguna on

September 1, 1995 with the success of food manufacturing and fashion,

the company got bigger and bigger by the year 2010. The company is

known by everyone in Luzon, for that, stockholders were present by the

year 2012, transportation from Luzon to Visayas and Visayas to Luzon was

added to the business to make ABC Holdings more famous by creating a

name in the Philippines with enough money by 2016

There are numerous sorts of vegetables that teenagers in this

generation do not prefer to eat. In some cases, they think that it is not good

to taste due of its texture, odor and most likely, it’s appearance. This

product not look delicious but it is full of nutrients given for our body.

Moringa is one of the most useful plant and vegetable. Malunggay is

a rich source of calcium, iron phosphorus and vitamin like A, B and C.

Green as it is, really meriting to be called as the wonder tree or the miracle

tree.

Concluding statement

The broad application of Moringa oleifera leaves in the treatment of

numerous diseases is prevalent globally where it extends to the

management of diabetes, hypertension, inflammation, hypercholesterolemia

and neurodegenerative diseases. This study provides findings on the role of

Moringa oleifera leaves formulated ice creams on brain cholinergic enzymes

[acetylcholinesterase (AChE) and butyrylcholinesterase (BChE)].

Conceptual framework

This study is based on nutrients giving of malunggay leaves with

cucumber ice cream. The conceptualization of the project leads to the

development of the product and further steered the researcher to construct

the project using mixing recipe available in local market. Testing and

evaluation of the device was done to determine the proper recipe and taste

the Acceptability of this product.

Research Paradigm

The research paradigm of the study was shown below. Frame 1

present the input, frame 2 the process, frame 3 the output and frame 4

evaluation on the Acceptability of the Cucumber Ice Cream with Moringa

Leaves

Frame 1 pertains to inputs which covers the problems encountered

about Cucumber Ice Cream with Moringa Leaves.

Frame 2 presents the process. This covers the planning and

designing of the project, project development, testing and validation,

revision and finalization.

Assumption

The malunggay leaves with cucumber ice cream is very efficient in

nutrition in terms of safety, deliciousness and productivity.

Definition of Terms

For clearer understanding of the study, the following terms were

operationally defined.

Malunggay. Malunggay (Moringa Oleifera), is a popular plant known

for high nutritional value as well as an herbal medicine. Malunggay is a

plant that grows in the tropical climates such as the Philippines, India and

Africa.

Cucumber. A cucumber is a long thin vegetable with a hard-green

skin and wet transparent flesh. It is eaten raw in salads.

Ice Cream. Ice cream is a sweetened frozen food typically eaten as a

snack or dessert. It may be made from milk or cream and is flavoured with

a sweetener, either sugar or an alternative, and a spice

CHAPTER III

OPERATIONAL FRAMEWORK

The chapter presents the project design, project development, testing

and operating acceptability and evaluation of the project.

Project Design

This section presented how the project work. This includes the

definition of recipe and what each nutrient does for this product. Block,

diagrams used was itemized including specification and details.

The major ingredients of the device are the following:

1. Ice Cream. ice cream contains six major components: water, fat,

protein, sugar, stabilizers, and emulsifiers.

2. Cucumber. is a widely-cultivated creeping vine plant in the

Cucurbitaceae family that bears usually cylindrical fruits, which are

used as vegetables.

3. Milk. Milk fat provides creaminess and richness to ice cream and

contributes to its melting characteristics.

4. Lime Juice. Limes are high in vitamin C and antioxidant both of which

may offer health benefits. Eating limes or drinking the juice may

improve immunity, reduce heart disease risk factors, prevent kidney

stones, aid iron absorption, and promote healthy skin.

5. Moringa. It contains proteins, vitamins, and minerals, making it useful

to fight malnutrition

6. Wasabi Paste. Wasabi paste is spicy and pungent in flavor and is most

commonly served with sushi and sashimi.

Supplies and Materials

The quantity, name and description, unit cost and the total cost and

materials used in the construction of the project is shown in table 1.

Planning and Designing. A schematic drawing of Cucumber Ice

Cream with Moringa Leaves was drafted by the researchers to come up with

the final design. Upon through study the design was finalized for

fabrication.

Gathering all the materials. In this stage all the materials and tools

needed in the development of the Cucumber Ice Cream with Moringa

leaves. The cucumber ice cream and the moringa leaves was bought from

the store where it was commercially available. All other materials and

ingredients were bought from the super market.

Developing of Cucumber Ice Cream with Moringa Leaves. This is the

step by step developing of this product by using ingredient and recipe to

create an efficient project taking into consideration every detail as planned.

Testing of Cucumber Ice Cream with Moringa Leaves. In this stage

the product was put into test and determine which part of the product

needs to be revised.

Revision. This stage calls for the replacement of the incompatible

component and refinement of the case as well as putting up finishing

touches on the product.

Finalization. The device was subjected to final scrutiny of each

member of the research group until everybody convinced that the output

product conforms to the designed agreed. The device is now prepared for

the evaluation by the respondents.

Project Evaluation

Developmental methods of research were applied in this study in

order to meet the desirable criteria. The systematic work drawing on

existing knowledge gained from the research and or practical experience
