of Citric Acid found in


200 grams of Banana
(Musa acuminata)

CHAPTER 1
Introduction
Banana are grown in more than150 countries
and 105 million tonnes of fruit are produced
each year. According to Khushboo Sheth (2017),
India produces the largest number of bananas in
the world followed by China and Philippines.
India gains the top slot by producing the largest Musa acuminata

number of banans in the world with 27,575,000


tonnes. It is followed by China (mainland) with
12,075,238 tonnes. The Philippines stand on the
third rank with 8,645,749 tonnes of production.

According to Schofield (2014), a medium
banana only has about a hundred calories. One
banana also has vitamin B-6, manganese,
copper, fiber, potassium and Vitamin C. Just one
at breakfast puts you well on your way to getting
enough Vitamin C for the day. Vitamin C can
boosts your immunity to colds, reduces
inflammation and slows the aging of skin.

According to Oregon State University (2015),
the recommended daily allowance (RDA) for
Vitamin C varies depending on age, gender and
other factors, is 75mg for women and 90mg for
men, pregnant and nursing women should take
80mg to 120mg depending on age. Since Vitamin
C is water soluble, most of the population can
take substantially more than the RDA without any
side effects, this means that Vitamin C is not
stored by the body.

It is filtered out and leaves the body in urine,
according to the NIH. In addition, adults require 40-
100mg of Vitamin C each day, though up to 1000g a
day is unlikely cause any problems. (Chambers,
2015) On the other hand, according to the University
of Maryland Medical Center (2015), not getting
enough of Vitamin C can cause easy bruising,
gingivitis, bleeding gums, dry and splitting hair,
rough, dry, scaly skin, a decrease wound healing
rate, nosebleed and a decreased ability to ward off
infection.

helps protect cells and keep them healthy it is also
involved in the productions of collagen which
maintaining healthy connective tissues important
for the support and structure of tissues and organs
including the skin, bones and blood vessels.

According to James Colquihoun (2012) If you think
banana are just for monkeys, think again. Banana can
improve your mood and reduce premenstrual symptoms
(PMS) symptoms by eating banana, which regulates
blood sugar and produces stress relieving relaxation,
banana reduce swelling, protects against type II diabetes
, aid weight loss, strengthen the nervous system, and
help with the production of with blood cells all due to
high levels of B6.

Banana help overcome depression due to high levels of
tryptophan, which is converted into serotonin—the happy
mood brain neurotransmitter, protect against muscle
crumps during workouts and night time leg cramps by
eating bananas, counteract calcium loss during urination
and build strong bones by supplementing with its fruit.

Chapter 3
Methodology
Research Design
This study will be focusing on the Citric Acid
within a 200grams of banana. Therefore, this study
will engage quantitative data. It will use to make an
inference about the citric acid within a banana. It
can inform broader understanding about the study.

Locale of the Study
The study will be conducted at Macario B.
Asistio Sr. High School Unit-I, which is located at
Pla-Pla Street Kaunlaran Village Caloocan City
that is found in Second District of National Capital
Region.

Materials
The product obtained from local supermarket in
Caloocan City. The fresh fruit is banana
weighing 200 grams. Banana is an edible fruit-
botanically a berry produced by several kinds of
large herbaceous flowering plants in the genus
Musa.

The fruit is variable in size, color, and firmness, but
is usually elongated and curved, with soft flesh rich
in starch covered with a rind, which may be green,
yellow, red, purple, or brown when ripe. But in this
study we used yellow banana and we will find out
how much acid is available within the 200 grams of
it.

Sample Preparation
Samples of the ready-to-formulate banana
that will take to the laboratory to be analyze.
The banana is covering with foil so that it
can’t be affected by sunlight or any insects. A
few weeks to wait to find out the result.

Equipment
Ion Chomotograpy analysis were
performed on the system.It is the process that
seperates ion and polar based on their affinity
to ion exchanger, it also work on a charged
molecule like proteins and amino acids.

Data Gathering Procedure
The first step used was to asked permission
and approval from the school principal to
conduct the study. The researchers will make
a study to determine the vitamins inside of
200 grams of banana.

the School of Adamson
University has a research
laboratory that is available
for a quantitative research
for the testing of the banana.
The researchers will wait for
a weeks to find out the
result.
