5 Daily Musts- Mastery through Depth of
Knowledge:
(DOK)
Why are they important?
1. Make a drink
2.Make a dish
3.Learn a Computer Skill/System.
4.Apply/Study the Constitution, PPP, or Employee Handbook.
5.Manage what you know.
Five Daily Musts- Example from Training Channel
Food - Crab And Artichoke Dip - Prepared both the crab dip and the flatbread itself.
Obviously critical for this recipe to properly handle the artichokes and crab so that the dip
isn’t watery from improperly drained artichokes. HH portion photographed here.

Drink - The Margarita 2019 - Although I’m still mildly confused about the name of this
drink, I thought the method behind it made for a very fresh and very aesthetically unique
margarita.

Constitution - Clear Direction - During this transition the team as a whole has been really
great at taking direction and not just to follow instructions but to take the direction as a
whole and follow through with larger tasks. From cleaning and organization tasks on the
cook level to administrative functions for Eric and Byron. As long as the tasks at hand and
vision overall are communicated effectively, I have no doubt that we will get the job done
as a team.

System - OneDrive - Still working on transitioning files from Box to OneDrive for the F&D
kitchen. Overall seems to work the same way possibly with a quicker sync from desktop to
cloud.

Manage What You Know - Inventory and Monday Chef Admin - Fully owned inventory and
Monday admin routine this week with great progress being made on FC and variances as
well as labor (mostly due to increased sales).
