COPYCAT RED LOBSTER

CHEDDAR BAY BISCUITS


Ingredients
2 cups of All Purpose Flour
1 Tbsp sugar

1 Tbsp baking powder

2 tsp garlic powder

1 tsp kosher salt

1/4 tsp cayenne pepper, Optional
1 cup buttermilk, soured milk or whey (can be subbed with whole

milk or half and half with a tbsp of white vinegar or lemon juice)
1/2 cup unsalted butter, melted

1 1/2 cups shredded sharp cheddar cheese

For the Topping

3 Tbsp unsalted butter, melted

1 Tbsp chopped fresh parsley leaves

1/2 tsp garlic powder

Yield: 12 Large Biscuits or 20 Small Biscuits

Chef Tips/Notes:
Any hard or semi-hard cheese can be used in this recipe, feel free to use what
you have available in your fridge!

Option Addition: Add a 1/3 cup of finely chopped scallions or Chinese chives
for an added extra flavor to the biscuits!

Instructions
1. Preheat oven to 450F. Line a baking sheet with parchment paper or a
silicone baking mat; set aside.
2. In a large bowl, combine flour, sugar, baking powder, garlic powder, salt
and cayenne pepper (if using).
3. In a large glass measuring cup or another bowl, whisk together
buttermilk and melted butter. Pour mixture over dry ingredients and stir
using a rubber spatula just until moist.
4. Gently fold in cheese.
5. Using a large tablespoon, scoop the batter evenly onto the prepared
baking sheet.

6. Place the biscuits into oven and bake for 10-12 minutes, or until golden
brown.
7. While the biscuits are baking, make the garlic butter topping. Whisk
together melted butter, parsley and garlic powder in a small bowl.
8. Once biscuits are removed from the oven, brush or spoon the butter
mixture over the tops of the biscuits, being sure to cover the full biscuit
evenly.
9. Serve immediately.
