A WORD FROM YOUR EDITOR
Christine Jones
Hello & welcome to the June/July 2022 edition of
Chatterbox Magazine!
No one knows what goes on behind the scenes of a magazine but the story
as to how this one even made it to the printers will forever amaze me. After
the best of two months work on this edition had taken place, I had a
computer crash and lost nearly a years work and records..but somehow you
are reading this! The amount of other lost work & admin that I will still have
to deal with is going to be very far reaching but that’s life I guess! I hope you
will enjoy all of the reading material in this edition, not least because some

FLAVOURFUL QUICHE
Makes Four to Six Portions
6 rindless smoked streaky (fatty) bacon rashers (strips)
300ml /half pint of double (heavy) cream
3 eggs, plus 2 yolks
25g /1oz /2 tbsp butter salt and ground black pepper
1) To make the pastry, place the flour, salt, butter and egg yolk in a food processor and process until blended.
Tip out on to a lightly floured surface and bring the mixture together into a ball. Leave to rest for 20 minutes.
2) Lightly flour a deep 20cm /8in round flan tin (quiche pan) and place it on a baking sheet. Roll out the pastry
and use to line the flan tin, trimming off any overhanging pieces.
3) Gently press the pastry into the corners of the tin. If the pastry breaks, gently push it together again. Chill for
20 minutes. Preheat the oven to 200°C/400°F Gas Mk 6.
4) Meanwhile, snip the bacon into small pieces using kitchen scissors and grill (broil) until the fat runs. Arrange
in the pastry case. Beat together the cream, the eggs and yolks and seasoning, and pour into the pastry case.
5) Bake the quiche for 15 minutes then reduce the oven temperature to 180°C/350°F Gas Mk 4 and bake for
20 minutes more. When the filling is puffed up and golden brown and the pastry edge crisp, remove the
quiche from the oven and top with small cubes of butter. Leave to stand for 5 minutes before serving. This
allows the filling to settle and cool a little before serving, making it easier to cut the quiche.
1) Remove the seeds from the melon, cut into 4 slices and cut away the skin. Cut the flesh into cubes and
put into a bowl.
2) Peel the kiwi fruit and cut across into slices. Add to the melon with the white grapes.
3) Remove the seeds from the paw-paw (papaya) and cut off the skin. Slice the flesh thickly and cut into
diagonal pieces. Add to the fruit bowl and mix well.
4) Mix together the liqueur and lemon verbena, pour over the fruit and leave for 1 hour, stirring occasionally.
5) Spoon the fruit salad into glasses, pour over the juices and decorate with lemon verbena sprigs or Cape
gooseberries.
