Burger Essentials
To me, the burger is the perfect sandwich, the perfect meal, one that
should never fail to satisfy. But the hamburger is too often overlooked and taken for granted. Sure, the burger is incredibly popular,
but is it truly appreciated? A great one should be. To achieve the best
burger possibleas with every sandwichyouve got to treat each
component with the thoughtfulness and respect it deserves.
I love a good old-fashioned cheeseburger
made with American cheese and topped with
some combination of sliced beefsteak tomatoes, dill pickles, raw or grilled sweet onions,
ketchup, and spicy horseradish-Dijon mustard.
And while that is a classic for good reason,
there are some times when I feel like getting a
little more creative with my burger. Once I get
started, I pull out all the stops in terms of
condiments and toppings. I like to be adventurous with my food, and the burger is no exception. So from coleslaw to sauted mushrooms,
from avocado relish to pickled onions, from
blue cheese sauce to blue corn tortilla chips,
Im up for it. But dont take that to mean that I
am reckless. I put a lot of thought into my
burgers and want to make sure that each
condiment and topping complements the other
and that everything ultimately comes together
to make the most delicious burger possible.

Argentinean Burger
Argentineans are well-known for their beef
and for their love of the grill. Just about
everything that comes off of the Argentinean
grill is garnished with chimichurri, a bright
herbaceous mixture of fresh parsley, garlic,
red wine vinegar, and olive oil. It could very
well be the national condiment. Knowing what
an affinity grilled meats and chimichurri have
for one another, it makes sense that a burger
would benefit from a dose of vibrant chimichurri as well. Rings of deep red onion and
slices of slightly salty Manchego cheese finish
the burger to perfection.

Argentinean Burger
Argentineans are well-known for their beef

Bolo Burger
This burger proved itself eternally popular on
the lunchtime menu of my Spanish-inspired
restaurant, Bolo. It is definitely an upscale
burger, featuring premium Spanish ingredients
such as Serrano ham, Manchego cheese, and
piquillo peppers. The rich and smoky aioli
comes together in a flash but youd never
know that from its complex, spicy-sweet taste.
Pressing the whole thing gives the bun a nice
crispness and also marries all of the elements
into a cohesive dish.

cup mayonnaise
2 cloves garlic, chopped
2 jarred piquillo peppers, drained
2 teaspoons smoked sweet Spanish paprika
teaspoon kosher salt

Breakfast Burger
There are some morningsand they usually
come after a long nightwhen all I can think
about is a breakfast sandwich piled high with
eggs, bacon, and cheese. Add a side of hash
browns and I might as well be in heaven.
Given my love of a good breakfast sandwich,
it was only a matter of time before I decided to
move that sandwich out of breakfast-only
terrain and into a burger. Breakfast, lunch,
dinner . . . now I can get my fix any time. I
prefer my egg cooked over easy because I
love how the yolk runs out and saturates the
burger after the first bite, but if thats not your
thing, you should of course cook the eggs
according to your preference.
