Lesson 2: The Kitchen Organization and Layout

1. What is the classical kitchen brigade?


Classical kitchen brigade refers to the way the kitchen in restaurants and hotels is set up,
with a hierarchy of positions and responsibilities and duties to go along with each position.
2. What is the modern kitchen Brigade?
The kitchen brigade separates the kitchen into several departments and helps to organize
these departments.

3. In your own opinion why is it importance of having a uniform in the kitchen?


In my own opinion, it is important to have a kitchen uniform to protect you from potential
hazards, such as direct heat from the open flames on your stove or hot splashes from
gastronome trays of oil removed from the oven. And also ensures food safety and cleanliness
when you are starting to cook and this will help to ensure that any contaminants carried on
normal clothing, such as pet hairs or dirt, do not contaminate the food that you are making.
4. What are some of the significant parts of a kitchen?
Some significant parts of a kitchen are the cooking area, storage area, food preparation area,
meal cooking area, service area, and washing area. These are the parts of a kitchen that you
must have when you are planning to have your own restaurant because these parts of the
kitchen will make your kitchen organized from what you are doing.
5. What is a work section, and what is the importance of having one?
The work section is the place where we see people who are busy doing their particular tasks
in the kitchen. The importance of having this is to have a place for making the dish that will
be served to the people and to have a comfortable place and focus on what they are doing.
