Hello everybody, today my group will present about Study on Beta-cyanin Extraction Methods

And Its Content In Red Dragon Fruit Peel And Beetroot.

Betacyanin is the natural red pigments that exist in many types of vegetables such as carrot,
beetroot, dragon fruit, and some tubers. They are a water-soluble substance that provides the
red-violet color,
The most significant betalains source is beetroot. However, to solve the global food waste crisis,
scientists and manufacturers are seeking methods to utilize the by-products, which is the peel of
red dragon fruit.

The raw beetroot and red dragon fruit were washed to remove dust. Then peeled and then cut into small
rectangular pieces, 10g of each sample are treated with 3 different methods: non processing, freezing,
blanching. Aftertreatment , all samples were immersed into the buffer solution pH 5.0 with different
ratios for extraction, and finally we have beta cyanin extract.

Red dragon fruit and beetroot were purchased from a local supermarket in Ho Chi Minh city.

this study was evaluate the effects of three variables – time, solvent-to-materials ratio (w/v), and
initial treatment (blanching, freezing, none processing) – on betacyanin extraction from
beetroots and red dragon fruit peels.

For beta cyanin quantification, 1000 μL of extracted juice was added to buffer solution and the
volume was made up to 25 mL. Then the absorbance of the diluted juice was measured at 538
nm . The betacyanin was calculated by using the following the equation
