Another possible correct answer would be to help direct the gas evolved in the beaker of water. As this experiment involves the fermentation of sugar by yeast, the gas evoived is carbon dioxide so a candidate who staies that the rubber tubing helps in the collection of carbon diaxide evalved would be equally correct in the experiment, the water in the beaker has two purposes: - tacts as a seal to the mouth of the rubber tubing fo prevent any air entering the tin can. it therefore ensures that anaerobic conditions exist in the experiment. - It aiso helps to show whether any gas is produced by means of bubbles. There are no bubbles in € and D because ~ in there are no yeast enzymes to ferment the sugar and - in D a temperature of 40°c is too high, so the yeast enzymes have been denatured and therefore inactive. Sugar is as a result not fermented. A word of caution to candidates is that they should avoid describing denatured enzymes as killed or destroyed. Enzymes are molecules and do not die but become denatured. The conditions most suitable for alcohol production are those prevailing in experiment A and are: - presence of yeast presence of sugar a suitable temperature of 25% and absence of oxygen . A word of caution to candidates is that they should watch out for the spelling of the.word de-starch. Many candidates tend to write detach instead, resulting in loss of marks.
