What is FLATWARES?
Refers to table utensils used to served and eat food, such as forks, spoons and knives
which are fairly flat in design.
Flatware made of silver or plated with silver is called Silverware.
The term flatware was introduced toward the end of 19th century.
FORKS
Existed during the Ancient times
Two prolonged and only used for cooking and serving food
Using forks was considered as an affront to god
Ancient Egyptians used the first table forks while the Qijia culture during 2400-
1900BC
Italy’s Catherine de Medici during the 16th century that made forks popular with the
French tables.
o ESCARGOT/SEAFOOD FORK - These are two prong forks made of stainless steel
which are escargot dishes.
o COCKTAIL FORK - This is a small fork like trident, used for spearing cocktail
garnishes such as olives.
o SALAD/DESSERT FORK - It has flatter and slightly broader tines than those of a
dinner fork, used when vegetables are served as salads.
o FISH FORK - It is usually smaller than the meat fork is meant when eating fish.
o DINNER FORK - It is used to eat the main entrée and the biggest fork on the table.
o CAKE FORK - It is narrower and slightly shorter than a salad fork that is used when
serving cakes and other pastries.
o CARVING FORK - It is used with conjunction with a carving knife, specially design in
carving meat.
SPOON
■ Comes from the Angolo-Saxon word “spon” which means a splinter or chip of wood.
■ Existed in Ancient Egypt, India, and both the Greek and roman cultures.
■ Design of the spoon evolved through out the Renaissance and Baroque period
■ Gain it’s modern look from the 18th century.
o TEASPOON - It is used to stir hot beverages. A small spoon that can be used to stir a
cup of tea or coffee.
o PARFAIT - It is used for stirring iced tea in tall glasses which has the same purposes
like the Long Drink.
o SERVING SPOON - It used to move food from the main dish to individual plates.
o PASTRY LIFTER - It is used to move the pastry from the main dish to the dessert plate.
o FISH KNIFE - It has varying shapes and sizes which are used when fish is being served.
o STEAK KNIFE - It is a special knife that has a sharp tip and a serrated edge to cut thick
portions of meat.
o CARVING KNIFE - It has straight edge, a shorter, thinner and wider blade which
enables it to cut the slices of meat.
o SLICING KNIFE - Slicing knives are used for cutting thinner slices of roast, fruit and
vegetables.
