Assignment 1 – Plan a Banqueting Function with Menu, Floor Plan / Layout, Area

Requirement, Décor or Arrangement, Costing and other necessary arrangement for the given
occasion or theme.

Note –

 Assume the Clients Brief from the Clients Perspective.


 Please remember your role is of the Banquet Manager.
 Also draw the Function Prospectus for the same.

Assignment 2 – Plan how to incorporate a given theme in an already running restaurant


without disturbing its basic - Décor, Table configurations or the Menu.

Note – Just some simple tips that a restaurant manager can incorporate with a little assistance
from the Chef , Bar tender and Executive Housekeeper.

Assignment 3 – Numerical on Area Calculations for a sit down buffet given the number of
pax

A client wants to host a dinner for 400 pax on round table arrangements. The banquet
hall available is 900 ft by 65 ft without any pillars in between and standard size of
tables available is of 72 inch diameter. Find out if the request of the client can be met or
not. Also calculate the number of round tables of 72 inch diameter that can be
accommodated in a banquet hall.
Assignment 4 –

To Propose a Table Configuration for a formal dinner party with the number of sprigs.

Propose a Table Configuration for a formal dinner party for ……guests hosted by Chief
Secretary of the State Government in honor of the Hon’ble Governor of the state on
occasion of XYZ. Head table to have ….. pax

Prepare a checklist (equipment) for an ODC of 100 pax. cocktail dinner


Assignment 6 –

Plan two menus for breakfast buffet for a Coffee shop in a 5 star hotel located at
Chennai for a tourist group of 100 pax who will be staying in the hotel for two days.
The group includes tourists from England , Korea , France , some NRIs from UAE.
What will be the timing of the buffet ? Give Reasons

 Crepe suzette
 Banana au Rhum
 Peach Flambe
 Rum Omelette
 Steak Diane
 Pepper Steak
