Background of the study

Okra chips are an oven-baked and deep-fried, crispy preparation of the seeded vegetable okra.
Okra is a popular vegetable in Southern cuisine. It can be cooked in a variety of ways, including roasting
to make vegetable chips. Slowly roast the earthy green pods at a low temperature to make crunchy,
low-carb, gluten-free snacks. Our product, Okra chips, is a delicious snack that is also inexpensive
enough for everyone to enjoy. You see, in a year like this, especially during a pandemic. Many people
follow healthy diets and lead healthy lifestyles, and we already know where the food on their table
comes from. The majority of them were ordered at fast-food restaurants and fast-food chains. Those
who buy food for themselves, on the other hand, are able to make informed decisions about the type of
vegetable they will purchase. As a result, we've determined that, by creating our own food product, we
hope to contribute to the positive aspects of the food processing industry.

Okra (Abelmoschus esculentus), an agriculturally grown plant that also belongs to the mallow
family and is thought to be heat-tolerant, will bloom and bear fruit throughout the hot summer months.
Okra is high in calcium, phosphorus, and potassium, as well as vitamins A and C, thiamine, riboflavin,
and niacin. Okra contains very few calories and almost no fat. It also contains a lot of vitamins and zinc.
However, one of its most significant advantages may be the high fiber content, especially for diabetics.
Diabetes has become more common in the Africa Region (AFR), where it was previously uncommon.
However, in Africa, Type 1 diabetes is estimated to affect approximately 39,000 people in 2013, with 6.4
new cases occurring per 100,000 people in children 14 years old (Peer et al., 2014). Globally, the
provision of food and beverages in schools through canteens, vending machines, and food fund-raising
ventures plays a significant role in modeling a healthy diet by providing messages that are integrated
into the school curriculum (Finch et al., 2006). But one thing is certain: okra is good for you. It can help
you lower your blood sugar and keep your diabetes under control if used as part of a healthy diet under
the supervision of a professional.

Farmers in the Philippines plant okra because it is a high-yielding crop that provides a good
source of income. Okra is also used in Filipino dishes such as pinakbet (shrunk) and adobong okra.
Meanwhile, in the Philippines, according to the National Nutrition Council (NNC), Filipinos consumed
only 110 grams of vegetables per day in 2008, down from 145 grams on a daily basis in 1978. Both
figures are still significantly lower than the World Health Organization's recommended daily fruit and
vegetable intake of 400 grams. Diabetes is common among older Filipinos who live in their communities.
As a result, effective public health measures for diabetes prevention and management are required for
the rapidly growing elderly population, who are at the highest risk of morbidity and mortality (De la
Vega, 2022).
In Tagum City, specifically Tagum National Trade School. School canteens sold a wide variety of
snacks and foods, some of which were nutritionally deficient. Thus, taking into account all of the
preceding issues and concerns, the researchers conducted a study to address health issue. So, this
innovative recipe assists students in obtaining various nutrients in their bodies in order to avoid risk
factors. As a result, okra chips were created.
