Rice exports: cautious optimism?

BR Research 01 Nov 2021
Pakistan’s rice exports staged a comeback during Q1-FY22, rising against low
base from Covid quarter during same period last year. Exports of all varieties
have shown marked improvement, with basmati rice exports recording a
particularly impressive performance, marching ahead by one-third in volume
terms.

But beyond the obvious low base impact, rice exports are struggling to get off the
rollercoaster ride they stepped on three years ago, failing to inspire confidence.
Exports remains significantly lower than Q1-FY20, when impact of currency
devaluation made commodity export temporarily very attractive. Since then, volumes
have struggled to maintain momentum, with annualized basmati volume well-under
million tons target, whereas non-basmati varieties are also trailing under peak
performance.
Although rice exporters have pointed fingers at the oceanic container shortage, much
more seems to be at play that explains below-par performance. Exporters are
struggling to fetch attractive pricing in the global commodity market, as rice prices
have turned out to be the only laggard in the ongoing global commodity price spiral.

International prices of most rice varieties are trailing well below their pre-pandemic
levels, and refusing to change gears from downward trajectory. Domestically
produced rice varieties are also no exception to this global trend, which is an outcome
of a glut in rice supply from East Asian countries.
It must come as little surprise to readers that Pakistan is a price taker in the
international rice trade, especially due its tiny share in non-basmati varieties
production. Since non-basmati varieties are mainly produced for export markets,
export volume has demonstrated resilience (as suppliers struggle to sell in local
market). But pricing has certainly taken a hit, in line with international trend.

In case of basmati, global demand remains steadfast at roughly 5 million tons per
annum, of which 0.6 to 0.8 million tons originates from Pakistan. Exporters from
India meet more than 80 percent of the global demand, and thus enjoy unchallenged
pricing power.
News reports from across the border suggest that India’s basmati exports may remain
restricted close to 4 million tons in the ongoing fiscal year, due to lower production
forecast in its local markets. Pakistani exporters thus have a golden opportunity to
maximize volume exported, but some risks to thesis persist.

Exporters insist that ‘ocean freight gone wild’ risks hurting prospects, as buyer
destinations are not entirely averse to higher prices. Ex-farm prices have already
adjusted upwards in response to lower production across the border, further
diminishing mills’ margins. On the other hand, buoyant demand for local
consumption means millers are happy to offload their output in the domestic market,
especially if price of substitute cereals (such as flour) also rise.

Given the complex dynamics, the recent round of currency depreciation has offered
some encouragement to exporters, which may be dampened due to change in macro-
settings: the possibility of an upward correction in Rupee as a result of an agreement
with IMF. If that happens, Pakistan’s rice exports breaching $2.5 billion in FY22 shall
remain a mirage.

Prices of kitchen items rise again in Karachi
* Petrol price, rupee depreciation blamed for persistent food inflation

Our Correspondent
NOVEMBER 1, 2021
Prices of all necessary kitchen products witnessed an increase this week compared to the
previous week, according to a poll conducted by Daily Times in Karachi on Sunday.

Traders told this correspondent that the increase in costs of vital kitchen products and other daily
necessities is a direct result of the increase in fuel and electricity rates, as well as the depreciation
of the Pakistani rupee versus the dollar and other major world currencies.

During the week under review, the price of 20kg bags of good quality wheat flour increased from
Rs1,500 to Rs1,600 per bag in the retail market. According to traders, the government-sponsored
20kg wheat flour bag was not only substandard but also not available to all consumers due to
millers’ requirement to purchase the same quantity of 15kg wheat flour bags at a premium price.
Sugar prices increased by another R300 per50kg bag, from Rs5,550 to R5,850, and are now
retailing at Rs 122-125per kg, up from Rs118-120 per kg. According to dealers, millers boosted
the price of sugar by Rs850 per 50kg in the last three weeks, bringing the retail price to Rs125
per kg. Prices for the highest quality ghee/cooking oil remained unchanged at Rs1750 per 5-litre
box. Traders told this correspondent that dealers of leading brands have informed them that the
price of a 5-litre pack is likely to reach Rs2,000 in the coming days, while the price of a single
litre pack would likely cross the Rs420 level.

Suppliers of several brands of packaged spices have increased their costs but also reduced the
size of their packs. For example, Shan and National spices increased their pricing from Rs75 to
Rs80 per pack but also lowered the bag’s weight from 50 to 43 grams.

The price of boneless beef, which increased from Rs800 to Rs850 per kg last week, the price of
boned beef, which increased from Rs700 to Rs750 per kg, stayed unchanged during the week
under review, while the price of mutton remained unchanged at Rs1,450 per kg.

Pulses prices remained constant at Rs280 per kg for good quality maash and Rs190 per kg for
best quality lentil. Bean lentils of superior quality are available for Rs280 per kg, masoor of
superior quality is available for Rs190-200 per kg, whole gramme of superior quality is available
for Rs 180 per kg, and moong is available for Rs140 per kg. Prices of powdered red chilies have
decreased from Rs400 per kg to Rs360 per kg, while prices of powdered turmeric have decreased
from Rs400 per kg to Rs375 per kg. Prices for both fresh and packaged milk stayed constant
throughout the week.
Additionally, the prices of various grades of rice have stayed steady. However, over the
weekend, chicken prices increased by a further Rs25 per kg. Prices of eggs also increased from
Rs190 per dozen to Rs180 per dozen.

Sri Lanka lifts ‘rice mafia’ tax for State Trading
Corporation imports

Monday November 1, 2021 10:48 am

ECONOMYNEXT – Sri Lanka has lifted an import duty for a state agency to import grain,
under whose cover a so-called ‘rice mafia’ has been raising prices to above global levels and
has been charging excessive prices from consumers.

The Finance Ministry has slashed a 65 rupee a kilogram tax on Raw Rice, Nadu Rice and
Samba rice to only 25 cents for Sri Lanka State Trading General Corporation to import rice.

The STC will be able to import rice with only a 25 cent tax for four months from October
2021.
The state agency is planning to import 100,000 metric tonnes of rice with paddy cultivation
also in a crisis due to a fertilizer ban.

Sri Lanka has a so-called ‘mafia’ or oligopoly of rice milers who buy and store
rice and release them to the market in between harvests.

The state has raised import duties of rice to keep domestic prices higher than
global levels.

In Sri Lanka Nadu rice now retails around export price of Thai Jasmine
(fragrant) rice. Nadu also has a ‘fragrance’ which has not won it a premium even
in the domestic market.

While giving the tool to the millers to raise prices through the import duty, authorities also
tried to impose price controls.

Sri Lanka’s rupee has fallen amid money printing, raisin the rupee price of most imported
goods.
The US Fed is also printing money and is firing a global commodity bubble.

However Sri Lanka’s rice retail prices are higher than in Pakistan and India due to the import
restrictions.

Pakistan IRRI-6 rice is exported at 390 dollars  a tonne, or 79 rupees a kilogram with a US

dollar at 203 rupees and 93 rupees a kilogram with the dollar at 240 rupees, before freight.

Indian Ponni Samba is about 660 US dollars or 134 rupees a kilo with the US dollar at 203
rupee or 158 at 240 rupees.

Thai 5 percent broken white rice is around dollars 400 dollars a tonne, or the same level as
IRRI-6.

Thai Jasmine rice was around 633 dollars in the last week of October, according to the  Thai
Rice Exporters Association  or around 129 rupees per kilo (dollar at 203) and 153 rupees with
the dollar at 240 rupees.

In Sri Lanka, Nadu rice is retailed at over 130 rupee a kilogram, Samba at over 150 rupees
and Keeri Samba is around 215 to 230 rupees a kilogram.

While keeping rice prices higher than the region, Sri Lanka imposed price controls on milk
and LP Gas creating shortages. The price controls have now been lifted and supplies are
starting to come in.

However forex shortages from money printing has created problems for importers.

Sri Lanka has a Latin America style central bank set up by a US money doctor which has
created external instability since 1950.

PM determined to turn Pakistan into Islamic

welfare state: Murad
Sun, 31 Oct 2021, 10:50 PM

SWABI, Oct 31 (APP): Minister for Communications Murad Saeed Sunday said Prime Minister
Imran Khan was determined to turn Pakistan into an Islamic welfare state on the model of
Riyasat e Madina and the government had taken various measures for the welfare of needy
people.
Addressing a public meeting at Marghuz here, he said all the citizens of Punjab would be
provided health cards by end of the current year.

“Welfare and well-being of the people is the top priority of the government.”

He said the biggest beneficiary after the completion of the China Pakistan Economic Corridor
(CPEC) would be Khyber Pakhtunkhwa.

He said the PM provided free health facilities to the people, adding people support Imran Khan
because he cared for the labourers and daily wage earners.

The minister recalled that the Health Insaf Card was initiated form the Khyber Pakhtunkhwa
province and now the card would be distributed among all people of Punjab.

He said when the government of Pakistan Tehreek i Insaf (PTI) was formed, Khyber
Pakhtunkhwa was badly affected due to war on terrorism but now with the grace of Allah the
province was peaceful and tourism activities had increased manifold.

Murad said the PM made stance of Pakistan clear before the world on the issue of sanctity of
Prophet Muhammad (PBUH) and raised the issue at all international forums.

He said in the past era, the rulers signed expensive energy agreements to stuff their own pockets.
The opposition put pressure on the PM to impose a complete lockdown during the coronavirus
pandemic but Imran Khan felt the difficulties and problems of poor people and did not go for
absolute lockdown.

Murad said opponents of the government did not care about the people but were running a
movement to protect their loot and plunder.

Inflation was an international issue and those blaming the government of PTI should be ashamed
of themselves, he remarked.

The minister said during the previous government, the province was afflicted with terrorism,
people of Malakand were made homeless and on that occasion people of Swabi opened their
doors for them and he was thankful for this gesture.

When some elements were linking Islam with terrorism, at that time Imran Khan came forward
and stressed that Islam was a religion of peace, he recalled.

He said sugar mills were owned by Zardaris and Sharifs, so if they had love for people they
would have reduced prices of sugar.

“They do not love people but love future of their children.” He said Nawaz Sharif went abroad
but even after such a long time could not complete his medical treatment.

Another user, Jaadoo, said, “Congress just hate people in general.”

Several users mocked Congress. A Twitter user Akshay said, “Are they really trolling Christian
missionaries or Modiji.”

Vipra Srivastava asked if their account had been hacked. “Rice bag joke by Congress? Is this the official
Maha Congress handle? Someone hacked it?”

Another netizen Emperor was confused when and how Congress started trolling the converts. He said,
“are yeh kab Hua (when did this happen)? congress trolling rice bags….lmao.”

What is ‘Rice Bag’ Convert?

‘Rice Bag Convert’ or ‘Rice Christians‘ or simply ‘Rice Bag’ refers to people who convert to Christianity
after being induced to do so by Christian missionaries on the promise of material benefits. The term has
been in use for centuries. According to The Brewer’s Dictionary of Phrase and Fable, published in the
19th Century, Rice Christians are “Converts to Christianity for worldly benefits, such as a supply of rice
to Indians. The profession of Christianity born of lucre, not faith.”

Over time, the usage of the term has entered mainstream use to mock Christians who converted for
material benefits.

Yuan Longping, the father of hybrid rice,

develops a new variety in 2011
Yuan Longping, the father of hybrid rice. Image: File
Chinese scientist Yuan Longping (1930–2021), known as the “Father of hybrid rice”, is
the most famous researcher on hybrid rice.

In the 60s, he made his seminal discovery of the genetic basis of heterosis in rice. This
was a unique discovery because it had been previously thought that heterosis was not
possible for self-pollinating crops such as rice. Longping developed a new hybrid rice in
2011 that can yield 13.9 tonnes/hectare.

Longping enjoyed worldwide respect due to his research work that helped rescue millions
from hunger and starvation.

Legendary plant scientist breathed his last at the age of 92 on May 22, 2021. People from
China and other countries, who had benefitted from his work, were all praise for the
founder of Yuan Longping High Tech Agriculture Company.

Longping not only helped China achieve food self-sufficiency but his hybrid rice
varieties have also impacted millions of people in other food-insecure countries.

On seeing people dying due to the worst famine during the late 50s and early 60s,
Longping initiated research in agriculture to boost food security in China.

“Famished, you would eat whatever there was to eat, even grass and tree bark,” Longping
wrote in his memoirs. “There was nothing in the field because hungry people took away
all the edible things they can find. They even eat white clay at the very extreme.”
“At that time, I became even more determined to resolve the problem by increasing food
production so that ordinary people would not starve,” he wrote.

Longping considered applying the inheritance rules onto sweet potatoes and wheat due to
fast growth rate. As sweet potato was not a part of the daily diet and wheat didn’t grow
well in Southern China, he turned his mind towards rice.

In 1973, he cultivated the first hybrid rice strain, which recorded a 20 per cent higher
yield than the existing varieties. In 1979, his technique of the hybrid rice was introduced
in the United States, which was also the first instance of the intellectual property rights
transfer in the history of China.

Longping donated crucial rice strains to the International Rice Research Institute in 1980.
These strains were used to create hybrid rice strains that could sustain and grow in
tropical countries for helping their food supply chains.

The Chinese government bestowed him with the highest award and also selected him to
carry the torch during the opening ceremony of the Beijing Olympics.

In China, hybrid rice is estimated to be planted on more than 50 per cent of rice growing
fields and it is credited with helping the country increase its annual rice yields, which are
among the highest in Asia. Hybrid rice is also grown in many other rice producing
countries, including Indonesia, Vietnam, Myanmar, Bangladesh, India, Sri Lanka, the
Philippines, Brazil and the US. A 2010 study published by the International Rice
Research Institute (IRRI), reports that the profitability of hybrid rice in three Indian states
varied from being equally profitable, as other rice to 34 per cent more profitable.

Outside China, other institutes are also researching hybrid rice, including the IRRI, which
also coordinates the Hybrid Rice Development Consortium.

Shahzad Ali Malik, chief executive officer of Guard Agricultural Research and Services,
and director Guard Group of Companies said: “Longping has largely contributed to
increase the income of farmers and poverty alleviation in paddy growing areas, besides
enhancing the rice exports of Pakistan.”

Malik has a decade-long association with the father of hybrid rice. The Yuan Longping
High Tech Agriculture Company is a partner of the Guard Agricultural Research and
Services. Dozens of Chinese scientists are working with the Guard to bring new rice
varieties.

“I first met Longping in 1998. I visited China to sign an agreement with the Hunan Rice
Research Institute. Meeting a person like him was a wonderful experience,” Malik said,
while recalling a conversation with the legend.
Longping said, “Research is a time-taking and money-consuming process. It can take 7-
10 years to bring a new seed variety. Even then there is no guarantee of its acceptance for
commercial use. You still desire to do research.”

“Though the words were apparently discouraging but had given me the motivation to
start research,” Malik said, adding that the Guard Group has collaborated later with the
Yuan Longping High Tech Agriculture Company.

“We have imported and commercialised eight hybrid coarse rice varieties in Pakistan.
Now we are marketing four hybrid varieties. The introduction of hybrid rice varieties has
brought a revolution in Sindh and South Punjab. These seeds have doubled the income of
growers, besides alleviating poverty in the paddy growing areas.

The exports of the hybrid coarse rice have increased considerably with the increase in
production. We are also exporting hybrid rice seeds to the Philippines. Definitely, late
Longping deserves credit for these revolutions in the lives of growers and increase in the
exports of rice and seeds,” Malik said, adding that the overall export of rice had
increased, despite a decline in the exports of the fine quality basmati variety.

“Before the introduction of hybrid varieties, revenue from rice exports was $700 million
to $800 million. Despite a decline in the exports of basmati variety, the volume of rice
exports is $2.04 billion,” Malik said, while attributing the increase in the rice exports to
the work of legendary plant scientist Longping.

Never said to eat less rice: Agriculture Minister

Agriculture Minister Abdur Razzaque (File photo)

Agriculture Minister Abdur Razzaque has said that he did not say ‘the price of rice
has gone up because people eat more rice’.

He said, “I did not say such words ever. I did not bring up this issue at all. I talked about eating
nutritious food.”

The Minister said this while addressing at a programme at CIRDAP Auditorium in the capital on
Friday (October 29).

Recently, various media published a news that Razzaque has suggested people to take rice less to
overcome the rice crisis, which went viral on social media.

Later, on October 26, the Agriculture Ministry sent a press release claiming that the statement
has been misquoted on media. He claimed that he never said to take less rice.

Agriculture Minister said, “Our scientists are working on what rice varieties and cultivation
should be. Human food security was an issue. We are very much dependent on rice. If there is
good weather, we have no problem. We have a food surplus. But now our goal is nutritious food.
As we have said in our election manifesto, we will give nutritious food and sea food to the
country’s people. This is our challenge now. To do this, agriculture needs to be modernized. We
are mechanizing. We will mechanize agricultural products through processing. We need to
increase the income of our farmers, increase their standard of living.”

He said, “I said this one more day, in one of our media journalists’ forums. Seventy seven media
covered my speech. But a newspaper reported that I had said that. I never said such things. I did
not bring this issue.”

The Andhra Pradesh government has been tackling one scam after the other, and one financial
crisis after the other. Almost every month, a new crisis is being named in the state. First, it was
the ‘fake challans’ scam in the stamps and registration department in September, where Rs. 13
Crores was subjected to the scam.

Later on, it was the ‘CM Relief Fund’ scam, in September itself, where Crores of rupees was
subjected to the scam, with the submission of fake medical bills and claiming funds under
CMRF. Now, yet another scam has been unearthed in AP, with rice millers having submitted
fake bank guarantees to AP civil supplies corporation. Rice millers have to submit bank
guarantees for milling rice for the public distribution system (PDS) so that the civil supplies
corporation supplies thousands of tonnes of paddy to each mill for milling. The millers have to
produce rice and return it to the AP civil supplies corporation. The millers have to submit bank
guarantees to the corporation as a security deposit for taking these paddy stocks from the
government for milling. If millers fail to return rice stocks, the government utilises bank
guarantees to cover up its losses. The officials of civil supplies corporations and rice millers have
colluded and submitted fake bank guarantees to the government. They forged the signature of
bank officials and corporation officials on fake bank guarantees and submitted them to the
government. The AP government is now looking into this.

Consul General

October 31, 2021

BEIJING  - Pakistani exports to China are registering a significant increase and export of
Pakistan rice to China during the first nine months of current financial year has broken previous
records, said Pakistan Consul General, Shanghai Hussain Haider.

He said this in his speech while representing Pakistan at the China Pakistan Economic Corridor
& Belt and Road Initiative Agriculture Cooperation and Exchange Conference in Shanghai while
secretary and members of Ministry of National Food Security and Research for Agricultural
Cooperation and Exchange participated online from Pakistan and showed a willingness to
enhance further cooperation in this sector, China Economic Net (CEN) reported.

Hussain Haider believed that this platform will serve to further deepen their partnership in the
crucial areas of agriculture, and will help modernize Pakistan’s agriculture sector, alleviate
poverty, and improve the livelihood of the masses.

India were not 'brave enough with bat or ball' against New Zealand: Kohli

Ye Junping, Deputy Director of Shanghai Municipal Agriculture and Rural Affairs, remarked
that Pakistan and China are all-weather friends and China Pakistan Economic Corridor (CPEC)
enhanced people-to-people relationship. Liu Xiangdong, Deputy Director of Agriculture Trade
Promotion Center of the Ministry of Agriculture and Rural Affairs, China said that a large
population in Pakistan is affiliated with the agriculture sector, adding that Chinese technology
companies can help Pakistani farmers improve their production by using smart technologies and
new techniques.

Dr Javed Humayun, Joint Secretary, gave a speech on the behalf of Secretary of the Ministry of
National Food Security, mentioned that the China Pakistan Economic Corridor (CPEC) is the
landmark achievement of two sides that has opened new avenues and opportunities for
cooperation.

This August forum, in fact, reaffirms our commitment for agricultural cooperation for which
foundation stone was jointly laid by the two sides during the visit of the Prime Minister of
Pakistan to China during November 2018 by signing of a Memorandum of Understanding
(MoU) that provided an opportunity for institutional cooperation between Ministry of National
Food Security & Research of Pakistan and the Ministry of Agriculture & Rural Affairs of
China,” he added. He said that Pakistan has launched various initiatives not only to enhance the
productivity of crops and livestock but also to uplift the livelihoods of the people of Pakistan.
These initiatives are first-of-their-kind and present an excellent scheme of collaboration between
federal and provincial governments to yield desired results.

“Economy of Pakistan is mainly dependent on our agriculture sector that employs more than
39% of our labour force. Besides its contribution as a major employer of the labour force, this
sector is also central to our economy as a source of raw materials for our industries including
textile and leather industries,” Javed stated.

“I believe that agriculture will be amongst key areas of cooperation under CPEC. Chinese
businessmen together with our private sector can explore opportunities to take benefit from the
incentives being offered by the Government of Pakistan for the establishment of joint ventures”,
he added. Ghulam Sadiq, Member Social Sciences Division, Pakistan Agriculture Research
Council said that “I am confident that our future endeavours will facilitate the creation of new
jobs and more of our youth will be engaged in joint ventures between Chinese and Pakistani
business firms”.

Dr Du Youkang, Professor of the Pakistan Study Center of Fudan University said China needs to
strengthen Chinese investment in Pakistan, especially in the agriculture sector. “We want to set
up some cooperation centers in universities in Pakistan, and through technology, education, and
so we can start with the agricultural economic cooperation”, he added.

It is to be noted that this year Pakistan and China are celebrating the 70th anniversary of
diplomatic relations and this conference was also part of those activities.

The discovery of ancient Peruvian burial tombs sheds

new light on Wari culture
Photographs of a dateless handout published by the Royal Tombs of Sipan for one of the 29
bodies found on the ancient ceremonial site of Lambayeque.
A team of archaeologists in northern Peru has found 29 bodies, including three children, that
could help experts rewrite the history of the pre-Inca Wari civilization, chief researchers said
Friday. rice field.

The skeleton was buried more than 1,000 years ago in Huaca Santa Rosa de Pucala, the center of
ancient rituals in the coastal area of Lambayeque, 750 km north of Lima.
The burial of three children and a teenager in front of the temple showed that they were human
sacrifice from the Wari culture, lead researcher Edgar Bracamonte told AFP.
Bracamonte said it was the first time that discoveries related to the Wari civilization had been
made so far from their area of influence.
“These discoveries allow us to rethink the history of the Lambayeque region, especially the
connection between the wali and Mochika professions in the region,” said Bracamonte.
Wari culture flourished in the Central Peruvian Andes from the 7th to the 13th centuries.
The Huaca Santa Rosa de Pucala enclosure was built between 800 and 900 AD in the form of the
letter “D”.
“We found 29 ceremonial temples Human corpse, 25 belong to the Mojica era and four belong to
the Wari culture, “says Bracamonte.
Moche, or Moche culture, developed between 100 and 700 AD on the northern coast of Peru.
Twenty-five Mochika ruins were found in the clay tombs and burial chambers of the temple.
Researchers also found pieces of pottery and debris of camelids such as llamas and alpaca and
guinea pigs.
One of the most important discoveries associated with Moche culture was the unearthing of a
5th-century Kao female mummy in 2006, indicating that civilization included female leaders.
Another mummy, Sir Sipan, of the 3rd century, discovered in 1987, was found by experts to be
the most important archaeological find in decades, as the main tomb was found to be intact and
untouched by thieves. It is considered one.

A true taste of India: Classic coconut fish curry

By MAUNIKA GOWARDHAN

+1
A staple in every southern Indian household because it is so simple to cook. I like to serve it with
rice and cucumber salad. Ask your fishmonger to cut the fish into steaks, as they will do it expertly
and ensure that the steaks still hold together with the help of a central bone.

SERVES 4

1 tsp ground turmeric

pinch of salt

juice of ½ lime

600g cod, monkfish or sea bass, cut into 3.5cm-thick steaks

60g white onion, roughly chopped

4cm ginger root, roughly chopped

4 garlic cloves, roughly chopped

2 tbsp vegetable oil

1 tsp black mustard seeds

5 green cardamom pods, whole

2 green chillies, slit lengthways

5-7 curry leaves

100ml water

½ tsp sugar

salt, to taste

400ml coconut milk

1 heaped tsp tamarind paste

½ tsp freshly ground black pepper

2 tbsp chopped coriander leaves, to garnish

 Mix ½ tsp of the ground turmeric with the salt and lime juice and rub into the fish steaks, then set
aside. Put the onion, ginger and garlic in a blender and whiz to a smooth fine paste with a splash of
water. Set aside.
 Heat the oil in a heavy-based, nonstick saucepan over a medium heat. Add the mustard seeds and
as they begin to sputter, work quickly to add the cardamom pods, green chillies and curry leaves.
Add the onion, ginger and garlic paste and fry for 1-2 minutes, then add the remaining ground
turmeric, along with the water, sugar and salt. Mix well, then simmer for 1 minute.
 Reduce the heat to low, add the fish steaks and let them cook for a further minute. Add the coconut
milk, cover and simmer gently for 4-5 minutes until the fish is moist and cooked through. Give the
pan a gentle swirl a couple of times to make sure everything is mixed but the fish pieces don’t
break up.
 Add the tamarind paste, black pepper and fresh coriander and stir well, simmering for 1 minute.
 Serve with plain basmati rice and a cucumber salad.
