Brown Sugar Glazed Sweet Potatoes
Ingredients
4 pounds red-skinned sweet potatoes (yams), peeled, cut into 1-inch pieces
8 tablespoons butter
Preparation
Preheat oven to 375°F.
Combine sugar, butter, cinnamon, salt, nutmeg and ginger in heavy small saucepan over medium heat.
Pour over potatoes; toss to coat (it hardens very quickly, just mix as best you can)
Bake potatoes 50 minutes. Remove about 30 minutes in and stir to mix the brown sugar sauce, then
place back in the oven.
Uncover; bake until potatoes are tender and syrup thickens slightly, basting occasionally, about 20
minutes.
Increase oven temperature to 500°F. Top potatoes with marshmallows. Return to oven; bake until
marshmallows begin to melt, about 3 minutes. WATCH THRU THE WINDOW, THEY WILL BURN QUICKLY.
NEVER FAILS TO BE THE MOST REQUESTED DISH NO MATTER THE SEASON. ENJOY!!
