BAKED LONDON FOG DONUTS

These London Fog Baked Donuts are soft, flavourful, and the perfect snack anytime of day!
The donut is an earl grey batter but is topped with the most luxurious vanilla bean glaze for
that signature London Fog taste. It is divine.

The best part about these donuts is that you can make them in one bowl! They come
together sooo easily and there is hardly any clean up. What could be better than that?!
Below are some of my top tips for making the perfect donuts.

1. You definitely want to make sure that you melt your butter first, and add in the earl grey
tea leaves, so that it can steep. This allows the earl grey flavour to really develop and
provide a more robust taste. Imagine you’re making a tea, but in butter! 

2. Next, you want to sieve (or whisk) your flour, baking powder, and salt to eliminate any
pesky clumps. There’s nothing worse than getting a lump of flour in a bite of your
dessert.

3. You want to make sure you whisk your egg before you add any ingredients. This just
helps to incorporate some air into the egg so that the donuts are light and fluffy. I
recommend whisking it for at least 1 minute as we aren’t using a stand or hand mixer.

BAKING THE DONUTS

I have used a small donut pan, so this makes enough for 9-10 donuts. However if you are
using a regular sized donut pan, it might only make 6. Make sure your pan is properly
greased so the donuts come out easily. 

If you don’t have a piping bag, a ziplock bag works just as well to get the mixture into the

tins! Simply fill your bag and add your mixture, I typically do one round with the piping bag.
But at the end just make sure the mixture is divided evenly. 

Then bake in a preheated oven for 10-11 minutes. You’ll know they’re ready when you press
on the donut and it feels springy. 

HOW TO MAKE THE GLAZE

The glaze is super simple to make, but man does it pack a vanilla punch! I recommend using
vanilla bean paste if you have it, as the specks and flavour really make a difference and
bring these donuts up on the luxe level. 

In a bowl add your icing sugar and vanilla, add half of your milk, stirring until combined.
Gradually add the rest of the milk, stopping if desired consistency has been reached. To test
the consistency, put some of the glaze on your finger and see if it runs off quickly (too thin)

BAKED LONDON FOG DONUTS

These London Fog Baked Donuts are soft, flavourful, and the perfect snack anytime of day!

DONUTS

• 120 g All Purpose Flour

• 1/4 tsp Baking Soda

• 1/4 tsp Salt

• 50 g White Sugar

• 1 tbsp Brown Sugar (packed)

• 1/4 cup Milk

• 1/4 cup Vanilla Greek Yoghurt (*)

• 1 Egg

• 30 g Butter (melted)

• 2 tea bags Earl Grey Tea

• 1 1/2 tsp Vanilla essence

GLAZE

• 1 1/2 cups Icing Sugar

• 2 tsp Vanilla Bean Paste

• 1/4 cup Milk

DONUTS

1. Pre-heat oven to 350F and spray a donut pan with cooking spray.

2. In a small bowl, melt butter & add earl grey tea leaves. Let this “steep” for 3 minutes.

3. In a medium bowl, whisk together flour, baking soda & salt, set aside.

4. In a large bowl whisk egg until lightly beaten. Then add melted butter & tea, and vanilla,
whisking until combined.

5. Add both sugars and whisk for 1-2 minutes.

6. Add milk & yoghurt to the wet mix and whisk until combined.

7. Add your dry ingredients and mix until just combined.

8. Add your donut mix to a piping bag (or ziplock bag) and fill your donut pan.

9. Bake in the oven for 10-11 minutes, or until edges are lightly golden. Let them cool

GLAZING THE DONUTS

1. Add your icing sugar to a small-medium bowl & add half of your milk.

2. Add the vanilla bean paste and gradually add the remaining milk, checking that it
doesn’t get too thin.

3. Dip your cooled donuts in the glaze and leave for 15 minutes to harden.

*Normal vanilla yoghurt can also be used.
