Happy Mother’s Day! Now that I am a mother, I’m realizing just what you went through with me. You

• 1 cup all-purpose flour
• 1 1/2 teaspoons baking powder
• 1 teaspoon sugar
• 1/4 teaspoon salt

Steps to Make It
1. Gather the ingredients.
2. In a small bowl, whisk together the flour, baking powder, sugar, and salt.
3. In a medium bowl, whisk together the milk, butter, egg, and vanilla extract.
4. Add the flour mixture to the milk mixture and whisk just until moistened
(the batter should have some small lumps). Heat a large non-stick pan,
cast-ironskillet, or silver dollar pan over medium heat. Lightly grease the
pan by brushing with oil.
5. Working in batches, drop the batter by tablespoonfuls onto the skillet.
Cook until bubbles appear on top and a few have burst, about 2 minutes.
Flip andcook until browned on the underside, about 1 minute.
6. Repeat with more oil for greasing the pan and with the remaining batter.
Besure to wipe the pan or skillet clean between batches.

They're healthy and vegan, making an ideal accompaniment to a Chinese meal or just on their own.

Nutrition: Per serving

Ingredients
• 200g rice noodles
• 1 tbsp mild curry powder
• ¼ tsp turmeric
• 1 tsp caster sugar
• 1 tbsp sesame oil
• 2½ tbsp low-salt soy sauce
• 1 tbsp sunflower or vegetable oil
• 1 onion , sliced
• 1 pepper , sliced (we used ½ green and ½ orange)
• 200g beansprouts
• 1 red chilli , sliced (optional)

MethodSTEP 1
• Boil the kettle and put the noodles in a large pan or bowl.
• Pour over enough boiled water to cover, pushing the noodles under thewater to help
them soften evenly.
• Set aside for 5-10 mins, until the noodles are completely soft.
• Mix the curry powder, turmeric, sugar, sesame oil, soy sauce and 1 tbspwater in a bowl.

STEP 2
• Heat the wok until very hot.
• Add the sunflower oil, onion and pepper.
• Stir-fry for 3-4 mins until softened and starting to brown in places.
• Drain the noodles and add to the pan, along with the sauce mixture andbeansprouts.
• Stir-fry for a further 3-4 mins, tossing everything through the sauce, untilhot. Adjust the
seasoning with a little more soy or sugar, if you like, and scatter over the chilli, if you like
more spice.
