Good planning avoids traffic lane at working areas
Plan properly the service entrance to the storage so that the traffic that is not
essential to food preparation like servicing or storing can pass the area.
STORAGE
Kitchen storage design should be functional to minimize reaching up and stooping
down. Storage facilities should be accessible to be reached out by a woman
standing both feet on the floor.
Provide sufficient space to store items that are easily seen, reached, grasped and
taken down and returned without excessive strain.
With proper planning, stored items should be located closer to where they are first
used.
Storage space should be flexible to allow its adjustment to supplies, kinds of food,
sizes, and utensils.
Shelving must be adjustable.

The height of the counter and working spaces should invite comfortable working
posture.
Continuous line of working surfaces provides ease of movement and cleaning the
area.
MATERIALS
Materials and finishes of a kitchen should be properly selected to minimize
maintenance and cleaning.
LIGHTING
Good lighting minimize fatigue.
Good lighting promotes safety and comfortable working place.
Lighting should be mounted at comfortable level.
VENTILATION
