California Raisin Pie

Material
2 cups seedless raisins 500 ml
2 cups water 500 ml
1 cup sugar 250 ml
¼ cup butter 60 ml
½ cup water 125 ml
¼ cup flour 60 ml
3 egg yolks 3
4 tsp grated lemon rind 20 ml
¼ cup lemon juice 60 ml
1 tsp cinnamon 5 ml
¼ tsp cloves 1 ml
19 inch (23-cm) baked pie shell 1
½ cup chopped walnut 125 ml

Steps
Combine raisins, 2 cups (500 ml) of water and sugar in a medium saucepan. Set over a high heat
and bring to a boil. Turn heat to moderate and cook gently for 10 minutes, stirring often. Add butter.
Combine ½ a cup (125 ml) of water and flour, stirring until smooth and stir this mixture gradually
into the boiling mixture. Boil for 1 minute or until thickened, stirring constantly.
Beat egg yolks lightly and add some of the hot liquid from the saucepan, a little at a time, beating
constantly. Stir the egg yolk mixture into boiling liquid gradually along with lemon rind, lemon
juice and spices. Simmer for 1 minute, stirring. Remove from the heat and cool until lukewarm.
Pour the mixture into a baked pie shell. Sprinkle with walnuts. Serve slightly warm or cold.

7. Mix the rest of the dough with cocoa powder.
8. Pour chocolate dough on the previous dough.
9. Bake the dough.
10. Serve in a slightly warm condition.
