A popular recipe for making sushi

Almost every recipe of sushi is same in regards of cooking rice but the type of toppings to be
used is different. Toppings make the sushi different from one another. The recipe for making
sushi is discussed as below.

If you do not have Japanese rice cooker do not worry as you can use a heavy pot also for this
but it should have a proper lid to close it. The ingredients are required to be measured
accurately.

First of all, prepare tezu that comprises of vinegar, water and salt in it. In the mean time, wash
the white short grained rice in a big bowl under running water and put it into the pot or rice
cooker. Add accurately measured water to it and cover it. Let it cook for about 15 – 18 minutes
on medium heat. Do not open the lid before at least 15 minutes and after that let it cook with
the help of steam which is already in it. Side by side prepare sushi vinegar by mixing sugar,
vinegar and salt in a saucepan. Stir it continuously on medium heat until it gets completely
mixed. Wooden spoon or a spatula is required for the purpose of folding and cutting the rice.
Do this very gently and do not smash the cooked grains of rice.

Now damp a cloth with tezu for the mixing bowl. The bowl should be of wood and the one with
a flat bottom is perfect to be used. Put hot cooked rice into this bowl and let it cool down for a
few minutes. Add 1/4th solution of sushi vinegar prepared to it. Mix everything collectively but
remember not to smash the rice grains.

After doing all of it, prepare toppings. Different types of toppings can be used that comprise of
different fish and sea food. Varieties of vegetables can also be used for the toppings.
