Ingredients:

● 1 cup sushi rice


● 2 cups water
● 1 tablespoon rice vinegar
● 1 tablespoon sugar
● 1 tablespoon soy sauce
● 8-10 aburaage (fried tofu pouches)
● 1 tablespoon vegetable oil
● Optional fillings: cooked shrimp, cucumber, avocado, or pickled vegetables

Instructions:

​ Rinse the sushi rice under cold water until the water runs clear. Drain the rice well.
​ In a saucepan, combine the rinsed rice and 2 cups of water. Let it soak for 30 minutes,
then cover and cook over medium heat until the water comes to a boil.
​ Reduce the heat to low and simmer for about 15 minutes, or until the rice is cooked and
the water is absorbed. Remove from heat and let it sit, covered, for an additional 10
minutes.
​ In a small bowl, mix the rice vinegar, sugar, and soy sauce until the sugar dissolves.
​ Transfer the cooked rice to a large bowl and pour the vinegar mixture over it. Gently fold
the rice with a wooden spatula to coat the grains evenly. Allow the rice to cool to room
temperature.
​ While the rice is cooling, prepare the aburaage (fried tofu pouches). Place the pouches in
a bowl of hot water for a few minutes to remove excess oil. Squeeze gently to remove
any excess water.
​ In a separate pan, heat the vegetable oil over medium heat. Add the aburaage and sauté
for a couple of minutes until lightly browned.
​ In a small bowl, mix 1 cup of water with 2 tablespoons of soy sauce. Add this mixture to
the pan with the aburaage and simmer for about 5 minutes to allow the flavors to absorb.
Remove from heat and let it cool.
​ Gently open each aburaage pouch to create a pocket for the rice. Fill each pouch with a
portion of sushi rice, pressing it lightly to shape it inside the pouch.
​ If desired, you can add your choice of fillings such as cooked shrimp, cucumber slices,
avocado, or pickled vegetables inside the pouch along with the rice.
​ Serve the Inarizushi immediately or refrigerate for a few hours to allow the flavors to
meld together. It is typically enjoyed at room temperature or slightly chilled.
