RECIPE

Buttered Ingredients
Carrots ● Carrots
● Salted butter
● Salt & pepper
● Herbs

Preparation
1. Take a lidded saucepan, on the lowest
heat, smallest gas ring, add 1cm from a
stick of butter per 2 carrots, season the
melting butter and stir until liquid.
2. Add carrots, ends removed and cut
into quarters length ways and in half
again.
3. Stir carrots to coat with butter, cover
with lid and allow to sweat in butter.
4. Open the lid and stir every ~4 minutes,
Ready in 25 minutes recoating the carrots.
5. Watch for excessive browning caused by
too high a heat.
6. After around 15 minutes, turn heat off
and allow to rest for ~10 minutes with lid
on to further soften without risk of over
caramelising.

Tips
Cut the carrots evenly and with a thickness
of ~1cm max. Too thick will be difficult to
soften without over browning.
Adding garlic and onions is delicious.
