Just found the list of what is a beast in 5e. Young Green Dragon isn't either, so I guess he can't
do any of these.
**EDIT**
He has clarified he wants to be a young green dragon. Would a young green dragon be
considered a beast?
Our rogue wants to have our Wizard polymorph him into a young green wyvern and then let the
wizard attempt to milk him for the venom to make a poison he can apply to his weapons.
We are close to end game anyways, so I will allow it, but trying to figure out what an appropriate
animal handling DC would be for him to successfully get the poison vs. something else?

wants to fight a wyvern ever again.

In a campaign a few years back, my rogue and the party bard - a green dragonborn - had a
similar relationship.
Green dragonborn venom isn't quite as potent as wyvern venom, but there was no polymorph
required to milk him for it. 8D

Polymorph only transforms you into Beasts and Wyvern isn't a Beast.
If they use a higher level version that has no such restriction, then sure, that means they're high
level enough that having wyvern poison isn't exactly a problem.

Rule of thumb: if it isn’t a real life animal (or a giant version of one), then it isn’t a Beast.
Giant Toads are giant versions of toads, which are real, so it’s a beast.
Green dragons aren’t real, so they aren’t a beast.

Also forgot to mention some flying creatures that are classified as beasts despite not being real,
like flying monkeys, flying snakes or birds.

What about a Komodo dragon? Their saliva has stuff that’s considered poisonous.

All monster stats tell what type of creature they are... and dragons are not beasts... they are
dragons ;)
on young green dragon it says... "Large Dragon" ... {Creature Size} {Creature Type}
i guess extracting poison from a wyvern would take some skill but also the player is the wyvern
and ask yourself if they can fail at doing this? If it were me I probably wouldn't even have them
roll but that's just me. Maybe a mishap and the player gets some poison on them a little could be
worth a roll.

Best answer here. The keywords in dnd matter a lot and this particular format is discussed in the
monster manual. Every MM entry has a creature type. If a spell effect lists something as
affecting a "Creature" That's any living thing. If lists something as affecting a specific Creature
Type (beasts in this case). That keyword of beast must appear in the correct spot on the stat block

I've always wondered if a druid wildshapes into something like an elk and has its antlers
removed, do they disappear when they drop the form? A couple druids could stop the rhino horn
trade very quickly.

half a deer, what happens to their stomach when they shift back?

Increase of supply does not 'stop the trade' it just bottoms out the market. Now, my rhino poacher
is making less money, but his only other path to income is adventuring, and he's not about that
life.

Would also like to point out that Polymorph also makes you an actual beast, not a "man in a
beast's body". Animal that knows the "friend/foe", but it's otherwise an animal. Ever tried to trim,
say, a cat's nails? YOUR cat, that lives with you and somewhat trusts you? Now imagine
"milking" a non-domesticated, feral beast that knows it probably shouldn't kill you... and that's it.
I say, Good luck to the d6 hit die wizard with this endeavour!

As a DM, their plan seems fine to me and I'd allow it in theory. They just need a different
transformation.

Wyverns aren't beasts, they'd need true polymorph and id allow that if they had it.

polymorph specifies it has to be a beast, wyverns have the dragon type so the only way that
could work is with the shape change or true polymorph spell

He could do like a snake instead. Lower save dc on that poison, and it doesn’t do a ton of
damage, but it’s something.
