Food preparation
Food preparation is the actions that are performed
to prepare food to either ensure that the food we
consume is safe to eat or to enhance the flavor.
As it relates to ensuring that food is safe for
consumption, food preparation can be broken down
into four categories- cleaning of preparation
equipment, separation of ingredients, ensuring that
foods are cooked to the right temperature, and proper
storage of prepared foods.
Why Is Food Preparation Important?
For growing restaurants, food preparation is
important for several reasons-

Food poisoning
Food allergies
Higher food quality
Fewer issues
Do's and Don't of Food Preparation
1. Do not rinse meat before cooking
2. Do not soak the meat in salt water
3. Do not use the same utensils for cooked foods for raw foods
4. Do not rinse eggs
5. Do wash your hands after handling raw meat
6. Do wash all surfaces immediately with hot, soapy water to prevent
cross-contamination after preparing raw meat or after meat or
poultry packaging contact
7. Do throw away packages from raw meat right away
8. Do make sure that all produce is rinsed with water before it is
prepared
How to Properly Prepare Egg
For any recipes that require raw or undercooked eggs, look for
eggs that have been treated to destroy salmonella. For casserole
dishes and other dishes that require eggs and will be cooked,
the minimum temperature is 160 degrees F. A food
thermometer is an essential tool to ensure that the food is safe
to serve. For stand-alone egg dishes, such as scrambled eggs, the
egg should not be runny.
How to Properly Prepare Pork
To measure the temperature of pork, use a digital meat
thermometer. The safe internal temperature is a minimum of
145 degrees F for pork chops, pork roasts, pork loin, and pork
tenderloin. Organ meats, ground pork, and mixtures
containing ground pork should be cooked to a minimum of
160 degrees F.
How to Properly Prepare Beef
If beef products are shipped to your restaurant frozen, they
should be thawed in a refrigerator. They should never be
thawed out at room temperature. It should be stored
separately from other ingredients, such as produce. Use
separate cutting boards and preparation equipment to
prepare the beef to be cooked.
How to Properly Prepare Poultry
Like beef, poultry should never be thawed at room
temperature. It should only be thawed in the
refrigerator and in a container where any liquid can be
contained
How to Properly Prepare Produce
Perishable produce should be kept in a refrigerator at 40
degrees or below.For pre-bagged produced, it may be
marked as pre-washed or ready-to-eat. However, it is
important that it does not come into contact with any
surfaces that were used to prepare any other foods such as
raw meat. This includes cutting boards.

Creating cocktails or any
beverages can be straight forward
or artistic depending on a person.

BEVERAGE PREPARATION:
1. SHAKING- when a drink contains
egg, fruit juices or cream, it is
necessary to shake the ingredients.

2. STRAINING- the goal is to


remove items before serving (it
can be used to remove ice from a
shaken drink)
3. STIRRING- it is to combine the
ingredients and dissolve enough
ice to water down the potent mix.

4. MUDDLING- is a technique used


in drinks to gently mash herbs or
fruit to release their juices.
5. BLENDING- an electric blender is
needed for recipes containing fruit or
other ingredients which do not break
down by shaking.

6. BUILDING- as the name suggest,


building a cocktail is a process of adding
one ingredients after the other and
stacking them straight into the glass. No
shaking or straining necessary.
7. LAYERING- to layer or float an
ingredient, cream or liquor on top of
another. Use the rounded or back
part of bar spoon and rest it against
the inside of the glass.

8. FLAMING- is the method by


which a cocktail or liquor is set a
light, normally to enhance the
flavor of a drink.
