Ratatouille
1 tsp Olive Oil
1 Red Onion - finely diced

2 Cloves of Garlic, crushed
% Aubergine, cut into chunks
¥% Courgette, cut into chunks
2 Button Mushrooms
1 Tomato, chopped
% Tin of Tomatoes
A small handful of fresh herbs - Basil, Thyme, Parsley, Rosemary (or any other herbs you have)
1 tbsp Balsamic Vinegar
Zest of 1/2 a Lemon
Salt and Pepper
Prepare all the vegetables
Heat frying pan with olive oil
Add Aubergine, Courgette and Capsicum and fry for about 5 minutes until lightly
browned but still hard
‘Add Onion, Garlic and 3/4 of the herbs and saute until slightly brown
Add Tomato and Tinned Tomatoes, Balsamic Vinegar, Salt and Pepper - fry for a further
4 minutes
Bring to a simmer, then cover the pan and simmer over a low heat for 15 minutes,
stirring often
Remove from heat once the mixture is thick and vegetables are cooked through
Top with grated Lemon Zest and remaining herbs
