Vegetarian Eating For Health

It doesn’t seem such a very long time ago that vegetarians were thought of as a cranky minority to
be viewed with suspicion and offered cheese omelet if they ever let inadvertently near your supper
table!

Today even if you are not a vegetarian yourself – or a demi – vegetarian –


there is probably at least one vegetarian in the family and we all have
several friends.
It is estimated that there are currently about three million people in Britain who don’t eat meat and
the number is growing daily.

What is a vegetarian?
There are several different degrees of vegetarianism and it is important to clarify the differences.
Demi-vegetarians aren’t true vegetarians. They can be described as people who don’t eat any red
meat, but will eat poultry and fish from time to time. However, some demivegetarians eat no
poultry either just fish.

Vegetarians can be divided into two sub-groups: Lacto-ovo-vegetarians eat no flesh of any kind –
no red meat, poultry and fish. They do eat eggs and all dairy produce,
including cheese, milk, and butter. Lacto-vegetarians eat everything lacto-
ovo-vegetarians eat except vegs.

Vegans go further than vegetarians, eating no flesh, no eggs and no dairy produce of any kind.
Some vegans will eat honey, others won’t. Some avoid any connection with
what they consider cruelty to animals by not wearing leather or fur, and not
using cosmetics or other products tested on animals. They eat nothing but
plant foods.

Fruitarians are even stricter than vegans, eating only fruits, nuts and seeds. The fruitarian diet is a
very restricted diet.

How healthy is a vegetarian diet?

If you follow a well-balanced vegetarian diet, all the research to date appears to confirm that you
will be eating healthily. Here’s why
: • It should never be lower in saturated fats (found mainly in meat and dairy produce) and in fats in
general than an average carnivorous diet – particularly veganism.
• It should be high in complex carbohydrates. These are unrefined or low-refined starchy foods that
should form the majority of the average vegetarian diet – bread, rice, and other grains, pasta,
potatoes, cereals, dried beans, peas and lentils and fresh fruits and vegetables. These complex
carbohydrates provide bulk for the diet; plenty of fiber and most also provide fairly good amounts
of protein.
• It should be high in vitamins, especially the antioxidant vitamins beta-carotene, C and E. These
anti-oxidant vitamins appear to offer protection against heart disease, stroke and cancers.

• It should be low in refined products and products high in additives.

No wonder, then that vegetarians have:


1. On average, a 20% lower blood cholesterol level than meat eaters.
2. A 30% lower cancer rate than meat eaters.
3. Fewer incidences than meat eaters of all the following: heart disease, stroke ,kidney stones,
osteoporosis, diverticulitis, angina, dental decay and rheumatoid arthritis.

The fact is that a well-balanced vegetarian diet consisting of a high proportion of fresh fruit and
vegetables and starchy foods is almost the exact recipe for healthy eating as prescribed by the
World Health Organization (WHO) in 1990.

Going Vegetarian?

People who come off a typical Western high-fat, low-fiber diet on to


suddenly large amounts of lentils, beans, vegetables and grains often find
their digestive system protesting – hardly surprising! The same would be
true of a vegetarian suddenly giving up their diet and going on a high-meat,
low-fiber diet. So give your body a chance to adapt and give yourself a
chance to get used to different ways of shopping, meal planning and
cooking by making the process of conversion a gradual one.
