STEP THREE STEP FOUR
Start your timer and start pouring water onto the coffee. After 5 minutes, break the crust and skim the top of the cupping bowl. Make sure the weight of water is within 2.0g of your target weight. After 8 minutes remove a 5ml-sample of the brewed coffee.
