Activity 5

Prepare at least 5 recipes for poultry dishes. Write the complete ingredients and procedures.

Easy Baked Chicken Breasts

Ingredients:

4 chicken breast halves skinless and boneless

2 tbsp olive oil

1-2 tsp of your favorite seasoning Old Bay, Montreal spice

salt and pepper to taste

Instructions:

 Pre-heat your oven to 375 °.


 Rub the chicken breasts with olive oil and sprinkle both sides with your seasoning of
choice. then place chicken in a baking pant.
 Bake in the preheated oven for 15 minutes., then flip the chicken breasts over and cook
until no longer pink in the center and the juices run clear AND an instant-read
thermometer inserted into the center should read at least 165 °F.
 Remove, salt and pepper to taste and use as needed.
Garlic and Herb Marinated Buttermilk Chicken

Ingredients

Buttermilk Marinade

• Buttermilk

• Garlic powder

• Dried basil

• Dried oregano

• Dried thyme

• Onion powder

• Black pepper

• Coarse sea salt

Chicken

• Chicken thighs or legs, bone-in

How To Make Garlic and Herb Marinated Buttermilk Chicken

• Pour the buttermilk marinade ingredients into a large sealing plastic bag

• Add in the chicken, seal the bag and then swirl around to coat the chicken completely

• Place into the refrigerator, and chill for 4 hours, turning once to evenly coat

• Remove the chicken from the marinade and place onto a baking sheet lined with a rack

• Place the pieces a couple of inches apart, leaving some space in-between

• Bake at 375 Fahrenheit for about 35 minutes, or until the meat reaches the internal
temperature of 185 Fahrenheit
Spatchcock Chicken

Ingredients:

 Medium size chicken


 Butter
 Garlic cloves
 Poultry seasoning
 Rosemary
 Parsley
 Salt & pepper
 Potatoes
 Carrots
 White Onions
 White Mushrooms

How to Make Spatchcock Chicken

 Mix together the butter and seasoning in a small bowl to make herb butter
 Spatchcock your chicken using strong poultry shears
 Place the chicken, breast side up, on a rimmed sheet pan
 Put 1/3 of the herb butter underneath the breast skin
 Dot another 1/3 of the herb butter mixture on top of the chicken
 Place the vegetables all around the chicken on the sheet pan
 Melt the last 1/3 of herb butter in a small saucepan, and then drizzle over the
vegetables
 Bake uncovered for 45 minutes at 400 Fahrenheit, or until the breast reads 165
Fahrenheit
 Remove from the oven, rest for 5 minutes, cut in pieces and serve

Baked Chicken Meatballs

Ingredients:

Ground chicken (or turkey)

• Egg

• Panko breadcrumbs

• Parmesan

• Olive oil

• Minced garlic

• Dried oregano

• Dried parsley

• Salt

• Pepper

How To Make Baked Chicken Meatballs


• Spray a large baking sheet with cooking spray

• Add all of the ingredients in a large bowl, mixing well until combined

• Once mixed, roll small amounts into balls ½ inch in diameter and place on the baking sheet

• Bake at 400 Fahrenheit until browned all over and the internal temp is 165 Fahrenheit

• Remove and dry on a paper towel before serving

Shredded Chicken Tacos

Ingredients:

• Taco seasoning

• Salsa

• Sliced, pickled Jalapenos

• Chicken broth

• Chicken breasts

•Avocado Crema

Toppings:

• Tortillas

• Chopped fresh cilantro

• Sliced radishes

• Lime wedges
• Shredded cheese

• Shredded lettuce

• Diced tomatoes

How To Make Shredded Chicken Tacos

• Combine the taco seasoning, salsa, chicken broth, and jalapenos in an Instant Pot

• Place the chicken breasts in an even layer

• Lock the lid into place and make sure the valve is set to seal, according to the manufacturer’s
instruction

• Cook for 15 minutes on manual / high pressure

• Prepare the Avocado crema and other desired toppings

• When the cooking is done, let the pressure naturally release for 15 minutes, and then quick
release

• Using two forks, shred and mix the chicken breast into the sauce, ensuring that all of the
pieces are shredded and totally coated in the sauce

• Remove, place in a bowl, and serve the chicken in the tortillas with desired toppings
