Stuffed Chicken Breasts:

Ingredients:
 4 boneless, skinless chicken breasts
 Salt and pepper, to taste
 1 cup spinach leaves, chopped
 1/2 cup sun-dried tomatoes, chopped
 1/2 cup mozzarella cheese, shredded
 2 cloves garlic, minced
 2 tablespoons olive oil
 1 teaspoon Italian seasoning
 Toothpicks or kitchen twine

Instructions:
1. Prepare the Chicken: Preheat your oven to 375°F (190°C). Using a
sharp knife, make a horizontal slit along the side of each chicken
breast to create a pocket, being careful not to cut all the way
through. Season the inside and outside of each chicken breast with
salt and pepper.
2. Make the Stuffing Mixture: In a mixing bowl, combine the chopped
spinach, sun-dried tomatoes, shredded mozzarella cheese, minced
garlic, olive oil, and Italian seasoning. Mix well to combine.
3. Stuff the Chicken Breasts: Spoon the stuffing mixture into the
pocket of each chicken breast, dividing it evenly among them. Press
the edges of the chicken together to seal the pockets. If needed,
secure the openings with toothpicks or tie with kitchen twine to keep
the filling inside.
4. Sear the Chicken: Heat a skillet over medium-high heat. Add a bit of
olive oil to the skillet. Once hot, add the stuffed chicken breasts to
the skillet and cook for 2-3 minutes on each side, or until lightly
browned.
5. Bake: Transfer the skillet with the partially cooked chicken breasts to
the preheated oven. Bake for 20-25 minutes, or until the chicken is
cooked through and the internal temperature reaches 165°F (75°C).
6. Rest and Serve: Once cooked, remove the skillet from the oven.
Allow the stuffed chicken breasts to rest for a few minutes before
serving. If using toothpicks or kitchen twine, remember to remove
them before serving. Serve the stuffed chicken breasts hot,
accompanied by your favorite side dishes such as mashed potatoes,
steamed vegetables, or a salad.
