Assignment 13

1a. Semi-quantitative is the test Ryan and his friends conduct to determine if
the honey sample contains sugar.
1b. The steps that they would be needed to carry out this experiment are:
firstly, piece of the food sample that is going to be tested, a test tube which the
sample is placed along with drops of benedict solution and then in boiling hot
water.
1c. The results that would expect to be observe is a blue black colour change.
2.The observation I expected to see is for the fat in the canola oil to disappear
because it will combine with the ethanol therefore the fat cannot dissolve in water
so it will come out of solution and form a white cloudy layer on the top of the layer
of water.
3. The three chemical reagents that she requires when testing non reducing sugar in
sugar cane are benedict solution, dilute hydrochloric acid and sodium hydrogen
carbonate solution.
3a. The sodium hydrogen carbonate will neutralize the hydrochloric acid, the
sodium carbonate provides the alkaline conditions required for the reaction to
occur and the benedict solution gradually turns from blue to cloudy orange or brick
red when heated with a reducing sugar.
4a. In one boiling tube add water, in another tube add a sample of protein. Shake to
mix then add an equal volume of Biuret reagent and mix. A purple colour will
develop if protein is present.
4b. A food item that can be used to test for carbohydrates is potato.
4c. Place one spatula of the food in a dish, grind food and add water to make a
solution then add 3-4 drops of iodine solution to the food. If starch is present a
blue\black colour will be observed.
