In not less than 5 sentences, explain how salting and curing related to drying. Cite
references

If you want to dry cure a meat or a fish, it is a must to use salt for this process. Dry
salting is a process where a product is rubbed or buried in salt before preserving. One
example of this is the dry salting of fish. A fish was split from the back bone and rubbed
with a lot of salt before taking out on a direct sunlight. The salt that was applied will
expel out excess moisture from the fish and dry in out under the sunlight. The high
concentration of salt makes it hard for microbes to thrive. The salt serves as the
preserving element and flavoring as well.
